Yesterday I pulled some weeds and the back started screamin' so I came in and cleaned out a kitchen cupboard. Got rid of stuff that had been in there wayyyyy too long. Also, since I don't use coffee beans anymore I found the perfect person to give them to... Leah! I gave her my bean grinder a couple months ago.

This is a quick and easy casserole dinner...
Baked Chicken Fettuccine Alfredo 
Baked Chicken Fettuccine Alfredo
24 oz fettuccine pasta
2 T olive oil
2# uncooked chicken breast cut into chunks
1 bag frozen peas (or if you don't like peas, use green beans... or whatever!)
2 (16 oz) jars Alfredo sauce
2 c mozzarella cheese, shredded
salt and pepper
 
Preheat oven to 350º. Cook pasta. Drain and return to pot. In skillet heat olive oil, add chicken, season with salt and pepper. Cook 7-8 minutes until chicken is no longer pink in center. Add chicken to pasta, add peas, mix with remaining ingredients. Pour into ungreased 13x9 baking dish. Spread evenly  and bake 18-20 minutes until cheese has melted.
(For me, I cut this recipe in half and use a 9x9 pan.)
 

The butter PJ brought over that Patty gave me is Amish Roll Butter. It's made in Wisconsin by Alcan Creamery
It's good and tastes 'lighter' than regular butter....

Patty got it at Food 4 Less, but I saw where Albertson's (Haggan) is selling it and also Amazon.


 
I hate it that my favorite TV shows are going on summer hiatus (Chicago Fire, Chicago PD, Blue Bloods)... Now it's reruns and reruns. Boring..................... Hope there are some good Hallmark movies. Tried to watch one last night... 'They Way You Are' with Candace Cameron (sister of Kirk). BORRRRRING...................................... Turned it off after the first 15 minutes. Watched Cops.

Police Officer's Memorial Day honors and remembers police officers who gave their lives while on duty.
Police officers protect us 24/7 every day of the year. It's a sometimes dangerous job. They know they are putting their lives at risk to make and keep us safe. Police officers know the risks, and accept them. Sometimes, they pay the ultimate price.
Please show our respect and appreciation for police officers everywhere...today....and everyday.
Ways to participate in this day:
  • Show appreciation for police officers.
  • Make a donation to a police officer fund or memorial
  • Participate in activities honoring officers who have died on duty.
  •  Better still, create a memorial event, if there isn't one in your area.
  • Thank your police officers for a job well done.

Yesterday I was working on a bunch of stuff at my desk. Trying to straighten out things and pay bills. UGH. Mike called and was on his way in from Medford and said he could stop and weed-eat, stack wood for me for a couple of hours. YEAH, have fire wood on the porch now! Got cold yesterday afternoon so it was time for a fire in the wood stove. Nice!
 
PJ stopped by with some "Amish butter" that Patty left with her for me and some of Cliff's smoked pork. YUMMMO!!
 

How about a quick easy casserole for dinner tonight...
Beef Rice Casserole
Rice and Beef Casserole
 
1 # lean ground beef
1 (6oz) package quick cooking wild rice mix
1 (11 oz) can condensed tomato soup
1/4 c milk
1 (8 oz) pkg frozen mixed vegetables
1/4 c black olives chopped
1 c mozzarella cheese shredded
Preheat oven to 350º. Spray casserole dish with cooking spray. In large skillet over med heat cook beef for 8-10 minutes, until brown. Drain meat. Make rice. Stir rice mixture, soup, and milk into beef. Spoon into casserole dish and mix with remaining ingredients except cheese. Cover and bake for 30 minutes. Sprinkle with cheese and bake uncovered 8-10 minutes until cheese melts.

Dinner was crab cakes (from Safeway) and salad... red bell pepper, celery, baby spinach, grape tomatoes.

I baked the crab cakes and topped them with some French Aioli Mayonnaise (Harry & David) .. which is garlic flavored mayo. I drizzled some Fresh Basil olive oil on the salad and a pinch of sea salt. OMGOOOOOOD!!!

Rain ~ Larry & Karen ~ Soothing Video ~ Limericks ~ Bruiser ~ Balloon ~ Frogs


Good 45º cloudy damp morning. Yesterday's rain was almost 1/4".

This is going around and I've gotten it from several folks. I LIKE it!!!

Yesterday friends Larry Tomes (LASD ret) and his bride Karen were going to be here in the early afternoon for a lunch at Tap Rock. They are on their way to Washington. Unfortunately they were going to make a pass through Crater Lake, but it was snowing up there and required chains. Detouring that, they called from Ashland and said they had breakfast not too long before that and thought lunch at this early hour was not good and wondered if I minded they kept on their long trek north. Of course not, they have a long drive ahead of them. Safe travels guys. Will catch up with you another time!
This is something very soothing... to alleviate the stress of your day... from my high school pal Mary (Fancher) Zavala...

I had that thing with Larry & Karen that didn't work out and then Dave was supposed to be up here after 5 so I couldn't go.
