Today is the 47th Anniversary of my high school friend, John
Berokoff and his bride Tanya. HAPPY ANNIVERSARY KIDS!!! Here's John in the 3rd
grade...Sierra Park, El Sereno.

and Suzanne's beautiful daughter Alyssa. HAPPY BIRTHDAY ALYSSA!!! Sorry I'm a
day late! Alyssa is quite the accomplished swim team member! Go
girl!!!

Just because I am not cooking at the moment doesn't mean I can't share a
favorite recipe with you. Try this for Christmas...
Streuseled Sweet Potato (Yam) Casserole ( I use yams!)

5 pounds yams - peeled and cubed
½ cup half-n-half (fat free)
1 t. vanilla extract
1/2 cup maple syrup (I like Mrs. Butterworths)
¾ t. salt
1 large egg slightly beaten
cooking spray
½ cup flour
½ cup packed brown sugar
1 cube chilled butter - cut into small pieces
4 oz pkg pecan bits (I chop up pecans and add about a cup!)
Preheat oven to 375º
Cook potato in heavy bottomed pot covered in water. Bring to boil and
simmer about 12 minutes, or until tender. Drain.
Combine the half-n-half, syrup, vanilla, salt, and egg in large bowl. Whisk
until mixed. Add potato and beat with a mixer on medium speed until
smooth.
Spoon mixture into 13x9 pan that has been coated with cooking spray.
Combine flour and sugar in food processor, pulse to combine. Add chilled butter
and pulse mixture until it resembles coarse meal. Stir in pecan pieces and
sprinkle over potato mixture.
Bake covered for 15 minutes. Uncover and bake an additional 25 minutes or
until topping is browned and potatoes thoroughly
heated.
Yesterday I went into Rogue River to pick up some packages at
the post office and get some flat rate boxes, put some checks in the bank, and
stop at the market for a bell pepper, onion, and some pork to make the sweet and
sour pork slow cooker recipe today. I couldn't stop drooling reading the recipe
and HAVE to make it! I showed it to our butcher, Ryan, and he said it sounded
good too. I gave him the recipe. He picked out the best value for the boneless
pork for me. After that I came home, got two packages ready to mail, then back
to the post office to get that done!
Had a talk with the Christmas Chicken so I FINALLY know what Tucker wants.
Got that taken care of. Did Face Time on the iPad with Sami last night and she
filled me in on what she wanted. Christmas Cards today and then a shopping trip
probably tomorrow.
Last night was soup, a glass of wine, and a Hallmark Christmas movie.
Sounds like the day before, eh?
