Three Corn Bake ~ Fruit Cake


Good very foggy 35º morning. Yeah. Not frozen!

 
Yesterday was one of the gloomiest we've had... looked like this alllllll day long..... No sun ever!
 

You know, when Christmas is on Sunday it's not fair to the working people.... no extra day off. Better if it's on Friday. Going back to work the day after always leaves you exhausted! And then to top it off, the Rose Parade and Rose Bowl Game will not be on New Year's Day. They will happen on Monday the 2nd of January. Fuey.


4 whole days left in 2011. Maybe we will be glad to leave this year behind. A number of sad occasions occurred and of course that idiot in the White House has managed to screw up more things and yet live the life of Riley! Grrrrrrrr.......
Such an arrogant ass! (Sorry, you BO hangers on... HE IS NOT MY PRESIDENT! Never was. Never will be. He's F'd up this country beyond belief.)


 
Ok, so here's the recipe for the Three Corn Bake:
1 15-17oz can whole kernel corn, undrained
1 15oz can creamed corn
1 8½oz box corn muffin mix
1 cup sour cream
1 egg, beaten

Preheat oven to 350º. Coat a 9x9 baking dish with cooking spray. Combine all ingredients, mixing well, pour into baking dish. Bake 40-45 minutes until center is set. Let sit at least 15 minutes before serving.

The only thing I did differently was add:

and 3/4 cup of cheese.

Now, to me it was a little too gooey. So, I checked every site on the internet with cornbread recipes that added corn. Every single one of them used just about the exact same ingredients..... except Taste of Home didn't add sour cream and Paula Deen added a WHOLE cube of BUTTER! Now, that's just not necessary. So, I was thinking of making it again, leaving out the creamed corn, adding diced celery and maybe some taco seasoning and more cheese. Maybe 2 eggs instead of 1. Will keep you posted.


So, last night I was complaining to Jeannie about the gooey corn dish and she suggested I slice and fry it and put maple syrup on it. Mmmmmm.... But, too sweet for dinner. So, I took her suggestion and fried some (tossed on crumbled bacon) and then heated a couple slices of Honeybaked ham and topped the corn with salsa. Then, I broke up some of the corn, added salsa to it while it heated and then topped the whole mess with cheese. VERY GOOD!

I usually get a fruitcake and soak it with rum for a week or two, but sorry Dave, didn't do that this year. And normally I make my grandmother's recipe for Scotch Cherry Cake...
similar to this one:

But I add glazed pineapple and red and green cherries ... a pound cake with 'some' fruit.
