Grandmother ~ Great Sky ~ Chili Bites ~ Noodle Day

On a sad note, Jerry's mom Winona passed away yesterday. She was going to be 90 in February. Her birthday was same as my Brian's... Valentine's Day. She had been ill and her body just couldn't recover. She was in a care facility for 2 weeks and asked the nurse for a blanket yesterday about 4:30am. The nurse brought her the blanket and walked out. She came back in a few minutes later and Grandmother was gone. She was born in Texas, her mother was a Cherokee and her dad was Italian. Winona Jewel Winton Maxwell. RIP Grandmother.

Ok, how about these easy tasty bites...


Ingredients:
1 can (16oz) Pillsbury Grands Flaky Layers refrigerator biscuits (8 biscuits)
1/2 cup shredded Cheddar cheese
1 can (15-16oz) chili
sour cream

Heat oven to 350º. Spray cooking spray into 6 jumbo muffin cups.

Separate dough into 8 biscuits, setting aside 2. Press remaining biscuits evenly into bottoms and up sides of muffin cups. Fill each with 2 T. cheese.

Place chili in small microwave bowl, covered with plastic wrap. Microwave on high 1-2 min, until hot, stirring once during cooking. Spoon 1/4 cup chili on top of cheese in each muffin cup.

Flatten the remaining 2 biscuits, cut each into 3 pieces, and place one dough piece on top of each cup. (will not cover entire cup)

Bake 17-21 minutes, or until edges of cups are deep golden brown. Cool 2 minutes. Remove from pan and top each with a dollop of sour cream.
