Can you believe it's the first of August already???
Jerry and I moved into this house on this date 1998. What a change from the
hustle and bustle of Southern California!
Ok, here's a super good easy one pot dinner perfect for summer, as you cook
it in your crock pot. A fav of mine.
Creamy Chicken and Vegetables
6 boneless skinless chicken thighs
2.5 pounds of new redskin potatoes or Yukon gold, cut into bite size
pieces
salt and pepper to taste
16 oz mini peeled carrots
½ cup sliced green onions
1 bunch of asparagus, trimmed and cut into thirds
2 10 oz cans cream of mushroom soup
½ cup milk
1. Place chicken in crock pot and top with potatoes
2. Sprinkle on salt and pepper (I use garlic salt)
3. Add the carrots and green onions, mix gently
4. Add asparagus on top
5. Salt and pepper again, if needed
6. Whisk together soup and milk in separate bowl and pour over everything.
7. Cover and cook on low for 8 hours.
I like to add in some chopped garlic cloves also.

Cocktail time last night was Sorrento Lemon Vodka on the rocks. Sooooooooo
refreshing!
Dinner was a couple tamales I rescued from the freezer and thawed.
Next cleaned off some ears of corn. The tamales went into the Air Fryer for a few
minutes and the corn ...
I put pomegranate mayo on the corn and green salsa on the tamales...
OMGOOOOD!!!!
