Good 31º slightly foggy morning. Sky up above is clear. Looks
like we'll get sun today!
Happy Sunday. Rain started yesterday a little after 9am.
It
stopped about 1:30 with about 1/4" of rain. Tucker played his little league game
in the rain. He pitched a scoreless inning and hit the winning run. Wow. A
baseball player extraodinaire! (Like his dad!)
This was last year. I will get one of him
currently in his Durham Bulls shirt as soon as I go to a game!
I spent the whole day yesterday working on taxes. UGH. Almost
done.
Today is the wedding anniversary of a dear friend, Rico
Escalante and his bride Annette. Rico works at the BC Range as a Law
Enforcement Tech.
We became friends years ago and would go to Dr. McLaughlin's
(Reserve doctor) house at the beach and spend the weekend, along with Charline
Aubin, LASD Reserve (BFF who d. 1999) and Sid Hackle (SR Capt... his brother was
John Wayne's personal photographer! And.. Sid used to go hunting in Mexico with
the Duke as well as fishing with him on the Wild Goose.) We would all share with
the cooking and had great times!

Dinner last night was soup.
I have all these Harmony House freeze
dried vegetables so I put a carton of chicken stock in the Crock*Pot, a bunch of
little peeled carrots and about 1/4 cup of each: mushrooms, green beans,
cabbage, tomato dices, bell peppers, broccoli, celery, and leeks. Let them cook
for a couple hours.
Then I added in a half carton of the jalapeño cream cheese and a can of
Progresso Creamy Chicken with Dumplings soup.............. Let it all cook for
another hour.
Boy oh boy, this soup is OMGOOOOD!!!!!
This morning I put the $5.57 whole seasoned chicken into the
big Crock*Pot for tonight's dinner...

Grilled Sandwich Day
(Be still my heart!)
Cook your grilled cheese in a waffle iron. So easy. So good! Spray the
waffle iron liberally with cooking spray. Butter the bread both sides and press
down the iron. Keep an eye on it and when done to your satisfaction remove the
sandwiches. Crunchy on the outside, creamy cheesy on the inside!!!
