OMGOSH, this is funny!!! A porcupine is given an ear of corn and then the
woman tries to take it back. The porcupine's response is hilarious!

I contemplated a recipe I saw on Rachael Ray. I do not like
her... waving her hands around constantly, flipping her hair, and interrupting
EVERYONE! But, her recipes are good so occasionally I'll record the show and
watch the cooking part later. The other day she made a linguini asparagus dish
that sounded heavenly.
Ingredients:
salt
1 pound asparagus, trimmed
2 T. olive oil
2 shallots, finely chopped
4 cloves garlic, grated
juice and zest of 1 lemon
1 t. crushed red pepper (I used Slap Ya Mama Cajun seasoning instead...that I LOVE! See link below...)
black pepper
1 cup white wine
2 T. butter
1 pound linguine (I used angel hair spaghetti instead)
1 cup grated parmigiano-reggiano cheese, plus more for serving.
Prep:
1. Fill a large bowl with ice water.
2. Bring a large pot of salted water to boil.
3. Add asparagus and cook 1 minute.
4. Using tongs transfer the asparagus to the ice water to cool. Drain, pat
dry, and cut into 1" pieces.
5. Bring water back to boil.
6. In a large skillet heat olive oil (2 "turns") over medium heat.
7. Add shallots, garlic, lemon zest, and crushed red pepper. Cook stirring
often 2-3 minutes.
8. Add wine and cook stirring often until reduced by about half.
9. Add the butter and stir the sauce until butter is melted. Reduce heat to
low.
10. Add pasta to boiling water and cook until al denté. Reserve 1/2 cup
cooking water, drain pasta.
11. Add asparagus to sauce and cook til heated through, 1-2 minutes. Toss
in the pasta, starchy water, lemon juice, and 1 cup cheese. Season to taste.
I also cooked an Omaha Steaks Italian Breaded Veal Patty in the Air Fryer
to go with.. (thaw, drizzle with olive oil, bake 400º for 12 minutes or in the Air Fryer I cooked it at 370º for 15 minutes.)
OK, I could eat this EVERY day!!! That pasta with the asparagus and
wine/butter/garlic sauce was AWESOME~!
Here is a similar recipe that adds shrimp. This looks awesomely
good too!!!
Later it was chair, wine, and TV. Oh, and even a chair nap!!

V-E Day
Victory in Europe Day (V-E Day) commemorates the end of fighting in Europe
during World War II. After years of war, The Third Reich of Nazi Germany was
defeated. Millions of people were killed. Adolf Hitler, Germany's Dictator, had
committed suicide in his bunker in Berlin.
The German Army ceased fighting on May 2, and formally surrendered
unconditionally, on May 7th. The surrender of all German forces was arranged for
May 8 at 11:01. The Allied countries planned to celebrate victory, and the
cessation of hostilities.
Did you Know? The original
planned date for the celebration of V-E Day, was May 9th, 1945. But,
journalists caught wind of the plans. So, the U.S. and Britain moved the date up
by a day to May 8th. Russia kept to the original planned date for May 9th.
Russia still celebrates V-E Day on May 9th.
