Yesterday was my yearly eye check up appointment with Dr. Jeffery Pelson
at The Eye Care Group in Grants Pass...
My eyes were totally checked, photographed, and dilated.
He said there is nothing wrong with them. Everything looked great and there
is not even any change in my eyeglass prescription! Yes!!!
This is interesting information... Brian was telling me about Michael

After the eye doctor I stopped at Safeway. I got some pre-cooked
teriyaki chicken and some frozen peas. Then home to cook... along with gnocchi,
olives, artichoke bottoms, tomatoes, chopped green chilies, white beans, cheddar
sauce....
Everything went into the pan except the gnocchi, that had to be
boiled...
After the gnocchi was cooked it went into the pool and everything stirred
and heated well.....
OMGOODNESS, this was SOOOOOO GOOD!!!!!!
Later, chair, wine, and the Olympics! GO USA!!!!!

Today
is National Raspberry Tart Day! The tart is the perfect combination of crispy
crust, creamy filling, and fresh fruit. Tarts originated during the Middle Ages.
Although sweet fruit-topped tarts are the most popular, many savory and salty
varieties also exist. For example, in France, many of these open-faced pies are
made with eggs, cheeses, meats, and vegetables. Whether you prefer them filled
with chocolate or goat cheese, tarts are always delicious!
To
celebrate National Raspberry Tart Day, head to your local bakery to pick up one of these fresh-baked
delights! Feeling creative? Make your own raspberry tart!
If you feel like cooking, you can make a raspberry tart
yourself and treat your family and friends. Here is a quick and easy raspberry
tart recipe for you.
In a bowl, blend together 1 cup all-purpose flour, 1/2 cup
butter, and 2 tbs confectioners' sugar. Let the mixture chill for 1 hour. Pat
chilled dough into a 9-inch tart pan. Bake at 375 °F for 10 minutes. Remove
crust from the oven and cool.
Arrange 4 cups fresh raspberries in crust. Heat 8 ounce
raspberry jam in microwave until it begins to boil. Pour jam over raspberries.
Cover the tart and put in the fridge for about 1 hour before
serving.
