"Why?" from NASA ~ Power Outage ~ Rice Cooker Dinner ~ Date Nut Bread



Good 33º I think it's raining out side morning, but it's too dark to see yet.

I was invited to two Christmas parties for today and both canceled because Tom and Debbie and Bill and Jeannie have no power since two nights ago! Severe power outages in Josephine County with over 13,000 in the dark and the Search and Rescue has been mobilized to evacuate people who may need to go to "warming shelters" in the possibility of an extended power outage. Jen's mom Jean is also without power, but went to Brian and Jen's to spend the night.


Here are a few pictures of the mess on our roads up here...
the first one are vehicles heading south... the second is going north from Grants Pass .. the third is down in N. Cal heading south...the last two are the Siskiyou summit. There are no motel rooms available in Grants Pass, as all are filled with stranded travelers. Don't know bout Medford.

..... and the telephone lines were so heavy with the wet snow they sagged all the way to within 4'-5' of the ground!
When the snow melted off the wires went back up to where they should be.

Dinner last night was simple.....


Rice cooker ...... add 1 cup Mexican flavored rice, mushrooms, artichoke hearts (and liquid), can of salmon, package of tabouli, can diced tomatoes (and liquid) and 1 cup water. Cook until rice cooker turns off.

SOOOOOOOOOOO good!!!!

National Date Nut Bread Day


Makes 2 loaves...
1½ c. dates, pitted and chopped
2¼ cups boiling water
3 t. baking soda
1 cup chopped walnuts
2 c. white sugar
3 T. margarine (butter!)
2 eggs, beaten
1 t. salt
4½ c. all purpose flour
1 t. vanilla extract
Combing baking soda with boiling water. Soak dates in the solution for 30 minutes.
Cream together sugar and butter, add eggs, vanilla, dates, nuts, flower, and salt.
Divide batter evenly between 2 greased loaf pans. Bake 1 hour at 300º or until loaf tests done. Can be frozen when cool.
