Thursday:
Yesterday in anticipation of the heat I did some early laundry
and vacuuming. Stayed in from the heat and since it was pay day, I played with
my checking account! Whoopppeeeeee...............
Today is a special birthday... friend Dennis Richardson.
Dennis is a Viet Nam vet who flew combat missions for the
Army, attorney, 6 terms in the Oregon House of Representatives, he was the
Republican nominee for Governor in 2014 (and lost to that creep Kitz-blabber!),
but now running for Secretary of State. He was born and grew up in Los Angeles.
He's a super good guy and I pray he wins this election!

Later for dinner I decided on a brown rice combo ... a can of tuna,
artichoke bottoms, olives, black beans, pimentos, and of course some chopped
celery and fresh tomatoes.
First the rice was cooked in the rice cooker.
Next the tuna, beans, olives, artichoke bottoms, pimentos were all drained.
Next olive oil in frying pan and all of that added in along with celery and
tomatoes.
After sauteéing awhile in went the rice and then ricotta cheese.
Mixed well and heated through. OMGOOOOOOOOD!!!!!!

National Cheesecake Day
As food holidays go, this is one of the tastiest of treats.
Here is a super tasty cheesecake I made some time back.
And.... instead
of the traditional cheesecake I made it with the new Philly Jalapeño Cream
Cheese...
This recipe for 6 mini
cheesecakes:
Make the crust with graham cracker crumbs, 1 cup + 3 T sugar + 3 T
melted butter. Mix well and press into bottom of pan. Bake 10 minutes at 325º.
(You will have leftover crumbs.)
Then in electric mixer put 2 tubs of the
Jalapeño cream cheese with 1 t. lemon extract (instead of vanilla), and 1/2 cup
sugar...mix well. Then add 1/2 cup Greek yogurt (instead of sour cream), mixing
well.... and then add 2 eggs, mixing well. Spoon into crusts and bake for 45
minutes at 325º.
OMGOOD!!!! Spicy, so for
those of you with delicate palates, don't make it for you...but make if for the
person in the house who likes SPICE!

good they should be illegal!!!
