Good 30º who knows what today will bring morning. Yesterday we hit 71º and
it was such a beautiful day. Hopefully today will be the same as I HAVE to mow
the grass!!!!

Ok, here's a delicious yummy recipe... made it dozens of times....
Linguini & White Clam Sauce
by Rachael Ray
1/4 cup extra virgin olive oil
1 t. red pepper flakes
4-6 cloves garlic, finely chopped or grated
6-7 anchovie fillets
2 T fresh thyme leaves, 4-5 sprigs stripped .. or 1½ t. dried
1 cup dry white wine
1 cup clam juice
1 can fancy whole baby clams
1 lemon, zested
1 pound linguini, cooked, drained
1/4 cup chopped parsley leaves
lots of black pepper and some sea salt
Crusty bread for mopping
Heat a large deep skillet over medium heat and add about 4 turns of olive
oil in a slow stream, red pepper flakes, garlic, and anchovies. (Anchovies do
not remain whole...they "melt" into the hot oil and impart a 'nutty'
flavor...not fishy or salty!) Cook until anchovies are melted into oil. Add
thyme and wine. Reduce wine 1 minute. Add clam juice and stir in clams and lemon
zest. Drain pasta and add to skillet. Toss and heat with sauce 2-3 minutes ..
until pasta has absorbed some of the sauce and flavor. Add parsley, pepper and
salt, to your taste and serve with bread for mopping up the remaining juices.

All I know. Happy Thursday. In a
few days all of you who are not Irish, will be! A reminder, if you are
cooking your own corned beef for St. Paddy's... put it in the crockpot and cover
it with Guinness beer! OMG. Makes the BEST corned beef ever!
St. Paddy's Day Corned
Beef
4 # corned beef
2/3 cup brown sugar
1 large can or bottle Guinness Draught
beer
Place corned beef in crockpot. Rub the brown
sugar on the entire corned beef, including the bottom. Gently pour the beer
around and gently over the beef to wet the sugar. Cook on low for 8-9 hours.
You can add in the cabbage/potatoes/carrots
with the brisket about an hour before it's finished cooking or cook
separately.
