The University of North Carolina Chapel Hill is the oldest State University in the United States.

In 1903 the Wright Brothers made the first successful powered flight by man at Kill Devil Hill near Kitty Hawk. The Wright Memorial at Kitty Hawks now commemorates their achievement.

The Outer Banks of NC hosts some of the most beautiful beaches in the country.

Cape Hatteras is the largest lighthouse ever to be moved due to erosion problems.

The University of North Carolina’s mascot, the Tarheels, is a nickname for North Carolinians that supposedly came from the days when NC produced a lot of tar, and someone saw a set of footprints made by someone who had stepped in the tar.

Did you know that you could make your favorite crispy chicken fingers right in the microwave? Yep! With our recipe for Sesame Chicken Fingers you can enjoy crispy, crunchy fingers in just 10 minutes, no frying oil needed!

 

  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 3/4 cup seasoned bread crumbs
  • 1/3 cup sesame seeds
  • 2 teaspoons dried thyme
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch strips

 

  1. Coat a microwave-safe 9- x 13-inch baking dish with cooking spray.
  2. In 2 separate shallow dishes, place flour and beaten egg. In a third shallow dish, combine bread crumbs, sesame seeds, thyme, garlic powder, salt, and pepper; mix well.
  3. Dip chicken into flour, then beaten egg, then bread crumb mixture, coating each side equally.
  4. Place chicken strips in prepared baking dish and spray the tops with cooking spray.
  5. Microwave at 80% power for 6 minutes, or until no pink remains and the juices run clear.

 

***Serve these with plum sauce or dipping sauce.

National Noodle Ring Day on December 11th recognizes recipes made with pasta into a delicious round casserole. While baking up your favorite recipe, maybe use round pasta noodles to really punctuate the ring in the day. 

While the day could possibly be about the little round pasta noodles, it would be a fun way to celebrate. They make up a delicious pasta salad or several other pasta dishes. They also are popular with kids (of all ages) to use in different craft projects, maybe even one that results in a beautiful snowflake for the holidays.

However, the day celebrates the pasta dish formed in an 8 or 9-inch ring mold or bundt pan. Usually made from noodles, flour, breadcrumbs, cheese, eggs, and other seasonings, this dish is quite versatile. When baked, recipes call for the noodle ring to be removed from the mold and served on a plate giving it an elegant appearance.
