Five Onion Soup ~ Stealing Seal's Thunder ~ Two Different Shoes Day


   

Good 45º raining morning.



Yesterday was the Law Enforcement/Fire luncheon and I had a chef's salad. Brought most of it home so dinner was salad. I know... a yawner. Thought you might be interested in this old recipe of mine for 5 Onion Soup.... It's awesome!

Made it many times. I think originally it was a Sunset Magazine recipe.... or Bon Appétit...


Five Onion Soup
1/4 cup butter                   1 leek, chopped (white part only)
1 yellow onion, chopped     1 red onion, chopped
2 shallots, chopped            2 celery stalks, chopped
1 garlic clove, chopped      1/2 cup dry sherry
4 cups chicken stock
1 (12oz) russet potato, peeled, cut into 1" pieces

Melt the butter in heavy Dutch oven over medium heat. Add the next 7 ingredients and sauté until translucent (6-10 minutes) Add 4 cups stock and potato. Simmer 20 minutes, until potato is very tender. Lightly puree soup in blender or food processor in small batches. Season with sea salt and pepper. Bring soup back to simmer for about 20 minutes. Thin with more stock if desired. Serve. Everyone who has ever tasted this version of onion soup LOVES it!



For those of you who like your onion soup topped with cheese and bread....

Preheat broiler. Mix 2 T melted butter with 1 T. mashed garlic in small bowl. Place slices of French bread on cookie sheet and brush with buttery garlic. Broil for about 2 min until golden brown. Turn and repeat broiling. Sprinkle bread with Parmesan cheese. Heat oven to 500º. Ladle soup into oven proof bowls, top each with 1 toasted bread slice, 1 slice of Swiss cheese, and 1 slice of mozzarella. Bake until cheese melts, about 10 minutes.

And an even better idea is to put 3 slices of the bread into the soup and 3 slices of Swiss cheese, let it sit for about 10 minutes until the bread is mush. With a hand blended (we always called a motorboat blender) blend up the cheese and bread and serve.
