I made a chicken tortilla soup that came out
fabulous!
Ingredients: rotisserie chicken, onion, garlic head, bell
peppers or small sweet peppers, butter, Rotel tomatoes with chilis, chopped
green chilis, diced fire roasted tomatoes, white beans, pinto beans, chicken
stock, 1 Lawrys Taco seasoning packet, chicken stock (1½ cartons), 10 corn
tortillas, tortilla chips, about 8 oz. grated cheese, ½ - 1 cup whipping cream.
Sauté the garlic, onion, and peppers in butter (1 cube) until tender. Drain
the tomatoes, chilis, beans, and Rotel. Shred chicken. Cut tortillas into small
pieces. Add all ingredients to crockpot ...except cheese, tortilla chips, and
cream. Turn on low for about 5 hours.
Before ready to eat, add in cheese and cream. Cook for another 10 minutes.
Ladle into bowls, top with crushed tortilla chips and some shredded cheese.
I didn't put crushed chips on mine, just more cheese. AWEOSMELY GOOD!!!!
Now if it so moves you, you can also add diced celery and carrots and 1 t.
garlic powder instead of the fresh garlic.
