Good 30º VERY foggy morning!

Yesterday the weather stayed cold (warmed to 43º) and windy. ICKY!!! No sun.


Couldn't use my sink so I rinsed dishes with water in the bathroom and dumped the liquid/food bits into the toilet! Joy. Waiting to hear from the plumber.......

Do you like green beans and mushrooms? Well, here's a perfect casserole to go with any main dish...

1 lb. green beans
4 T. butter, divided
1 small yellow onion
8 oz white mushrooms
¼ t. dried thyme
1/8 t. salt
2 T. all purpose flour
1 cup vegetable broth (or chicken)
2 T. grated Parmesan, divided
1 cup Panko bread crumbs

1. Rinse green beans, snap off stem end and break each bean into 1-2" pieces. Place beans in medium pot, add about 1" of water. Cover and bring to boil over high heat. Allow beans to cook in the steam until they are tender-crisp (about 5 minutes). Drain in colander and set aside.
2. Preheat oven to 375º. Dice onion and cook in large skillet with 2 T. butter until soft and translucent.  While onions cook, clean and slice mushrooms.
3. Add sliced mushrooms to skillet with onions. Season with salt and thyme. Continue to cook until mushrooms have softened and most of the moisture has evaporated from the bottom of skillet.
4. Add flour to skillet and continue to cook and stir for 2 minutes. The flour will form a paste. After 2 minutes, whisk in the broth until the flour has fully dissolved.
5. Allow mixture to come to simmer, it will thicken slightly. Whisk in 1 T. grated Parmesan.
6. In separate bowl, melt the remaining 2 T. butter (about 20-30 seconds in microwave). Stir in the Panko crumbs and stir in the remaining T. of Parmesan. Stir well until everything is evenly coated in butter.
7. Sprinkle the Parmesan/Panko topping over the green beans in the skillet. Transfer to oven and cook 30 minutes, or until the Panko topping is golden. Serve hot.
Use an oven safe skillet or transfer the green beans/mushrooms to an 8x8 baking dish and top with Panko breading. Bake as directed.

Later dinner was a steak filet cooked in the Air Fryer and a stuffed portabello  mushroom baked in the oven...
Not fancy, but quick and easy and minimal clean up... having no working sink, this was the best way to go.
