Fires ~ Wreck on Road ~ Lover's Lane ~ Dude Bruise & Maggs ~ Veggie Pasta Salad ~ Lasagna







 

Good 52º morning. Hit 93.5º yesterday. All this week it will be in the high 80º's, the 90º's, and a 100º is predicted. Joy. There are clouds mixed with smoke hanging overhead this am at 7:30.....



...and while I was out taking pictures my pups were keeping and eye on me..



The wildfires here in Oregon are still going strong and there may be more evacuations. People close to the fires have been warned. Brimstone fire is 500 acres, one near Selma is 400 acres, near Wolf Creek is 80 acres, Big Windy near Galice is 1500 acres, and the Douglas County fires are listed at 7500 acres. Poor air quality still lingers here in the Rogue Valley as smoke continues to hang in the air. Firefighters are here from around the state and across the country. God Bless them!

 

Last night at 5:30.....



 

Yesterday morning I got a call from Dave... he said there had been a spectacular accident down on the road in front of he and PJ's house. Took Dude for his run and took pictures. This occurred at 1am and police,fire, tow trucks were there til 3am! The driver and passenger split.... left cell phone, 12 empty beers, and a bowling ball... I made a Smilebox using Dave's photos and mine...

Good Things Come To Those Who Wait.

A state trooper was patrolling late at night off the main highway. Near midnight he sees a couple in a car, in lover's land, with the interior light brightly glowing. He carefully approaches the car to get a closer look. then he sees a young man behind the wheel, reading a computer magazine. He immediately notices a young women in the back seat, filing her nails.

 

Puzzled by this surprising situation, the trooper walks to the car and raps on the driver's window. The young man rolls down the window and asks, Uh, yes, officer?" The trooper asks, "What are you doing?" The young man says, "Well, officer I'm reading a magazine." Pointing to the young woman in the back seat the trooper asks, "And what is she doing?" The young man shrugs, "Sir, I believe she is filing her nails."

 

Now the trooper is totally confused. A young couple, alone, in a car at night in a lover's lane, and nothing inappropriate is happening! The trooper asks, "What is your age young man?" The young man says, "I'm 22, sir." The trooper asks, "And her, what is her age?" The young man looks at his watch and replies, "She'll be 18 in 11 minutes, sir."

Last evening everyone was napping (except me with my camera!) Dude was a happy boy on the couch (now covered with a sheet) and he had his piggy close....



Then Bruiser was in the chair on the throw..... tired of that and moved to perch ...


 

Maggie wondered why the fuss and all the flashes going off...

So, dinner was easy... salad with pasta...

I cooked some mini cheese tortellini, cut up some fresh basil, one of Jeannie's cucumbers, and tomatoes... 

Dressing was mayo, lemon juice, garlic powder, salt and pepper.... Then I tossed in some black olives and cheese....

 

YUMMMMMM!

 

That and a glass of wine....perfect!

National Lasagna Day

National Lasagna Day Whether you spell it lasagna or lasagne, this dish has quite a history. You probably regard lasagna as a standard Italian menu item. But it's likely that the Romans borrowed this popular entree from the Greeks. Lasagna even was one of the recipes found in the first cookbook ever written in England!

Easy Four Cheese Lasagna
16 ounces uncooked lasagna noodles
2 cans (26 ounce size) spaghetti sauce
1 pound ricotta cheese
8 ounces shredded mozzarella cheese
8 ounces shredded Cheddar cheese
1 cup grated Parmesan cheese


Preheat oven to 375º Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain (I used the no-boil noodles. Came out great).

In a blender or with an electric mixer, blend tomato sauce and ricotta cheese together until smooth.

Spoon a little of the sauce mixture in the bottom of a 9x13 baking dish. Place a layer of cooked noodles over the sauce, and sprinkle a portion of the mozzarella, the cheddar and the Parmesan over the noodles. Repeat layering of sauce, noodles and cheese; finish with a cheese layer.

Bake in preheated oven 30 to 45 minutes, until cheese is bubbly and golden.

or how about this easy one....

White Seafood Lasagna
1 box (1 lb size) lasagna noodles; cooked and cooled
1/2 pound shrimp
1/2 pound crab meat
32 ounces cottage cheese
3 large eggs
4 tablespoons Parmesan cheese - (dry)
4 tablespoons butter
1 cup Parmesan cheese (fresh grated)
1 tablespoon salt
1 tablespoon black pepper
1 tablespoon minced garlic
24 ounces Alfredo sauce

Mix salt, pepper, garlic, dry Parmesan cheese, softened butter, eggs, and cottage cheese. Layer lasagna, cottage cheese mix then crab. Layer lasagna cottage cheese mix then shrimp one more layer of lasagna noodles. Pour Alfredo Sauce over top. Spread fresh grated Parmesan cheese over Alfredo Sauce. Bake for a little over an hour until the top is a golden brown.

VARIATION: Add fresh finely chopped parsley to cottage cheese mix. Use Romano cheese along with the Parmesan on top.
