Interesting about Phoenix!
Although Arizona is not one of the most populous states in the U.S., it has by far the highest state capital population in the country with close to 1.7 million people living in Phoenix. Austin, Texas is a distant second with around 900,000 residents, and Columbus, Ohio comes in third with approximately 860,000 residents. The vast majority of state capitals have fewer than 200,000 residents. For example, Florida is one of the most highly populated states, but its capital, Tallahassee, has a population of just 191,000. New York City is the largest city in the US, but New York state capital Albany has fewer than 100,000 residents.

Crispy Prosciutto Wrapped Asparagus Fries

  • 1 1/2 pounds asparagus, trimmed
  • 4 ounces prosciutto
  1. Wrap the asparagus with the prosciutto and either bake in a preheated 450º oven, grill or fry in a pan over medium-high heat until the asparagus is tender and the prosciutto is crispy on all sides, about 6-10 minutes, flipping half way through.
Use bacon instead of prosciutto and bake in a preheated 450F oven, grill or fry in a pan over medium-high heat
until the asparagus is tender and the prosciutto is crispy on all sides, about 15-20 minutes. (Pre-cooked bacon will only 6-10 minutes.)

  Serve with hollandaise sauce.

Pour a glass of your favorite wine on May 25 to participate in National Wine Day. (Like we need an excuse!) Celebrated each year, it has a sister holiday in February, National Drink Wine Day.
Made from fermented grapes or other fruits, wine is an alcoholic beverage.  During the fermentation processes, yeast consumes the sugars in the grapes converting it into alcohol.  Different grapes produce different wines.  Winemakers will combine different wines to create more complex flavors.  Wines made from fruit or honey are often named according to the variety of fruit used.
