Hawks ~ Daisy & Cooper ~ Tommy & Christina ~ Pumpkin Pecan Bread ~ St. Nicholas


Good 42º hardly cloudy at all morning! Last night the winds came up. Boy howdy it was howling! Then the rain. Only got 1/4".  Sure thought a lot more after the "weather people" showed we were going to get deluged! Ha.


The turkeys outside were making a ruckus so I looked out and up in the tree above the barn were two red-tailed hawks..

I know I had this on my blog before, but Trish sent it to me so thought I'd post it again. So funny that Cooper. Why does Daisy get to lick the ice cream first? Because Cooper is like Bill and Jeannie's Chaka!!! LOL.

Yesterday I finally finished up my calendars for Christmas. Need to get them ordered today.
Today is the 50th Anniversary of a couple from high school, Tommy and Christina (Vasquez) Lozano. Haven't heard from them since Christina retired. They are living in Colorado. If any of you Wilsonites have their email address I'd love to have it! HAPPY ANNIVERSARY KIDS!

PUMPKIN PECAN BREAD


Yield: 1 loaf
Prep Time: 10 min.
Cook Time: 60 min.

INGREDIENTS:

2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground ginger
1/4 tsp ground cloves
2 eggs
1 cup pumpkin puree
1 cup packed brown sugar
1/2 cup coconut oil, melted
1 tsp vanilla extract
1/2 cup chopped pecans

DIRECTIONS:

Preheat oven to 350 degrees. Lightly grease a small loaf pan with cooking spray.
Whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and clove in a small bowl. Set aside.
In a large mixing bowl, beat together the eggs, pumpkin, sugar, coconut oil, and vanilla. Mix well. Add the dry ingredients and mix until just barely combined. Fold in the pecans. Scrape the batter into the prepared pan. Side Note: The batter will be VERY thick!!
Place into the oven and bake for 60 minutes, or until a tester inserted into the center of the loaf comes out clean. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

St. Nicholas Day


St. Nicholas Day is today. Yes, there really was a christian Saint Nicholas. He lived in the country of Greece, just a couple hundred years after the birth of Christ. This day is in honor of Saint Nicholas and his life.
Saint Nicholas became a priest, and later, a Bishop of the early Catholic Church. True to the christian concept of giving up belongings and following Christ, St. Nicholas gave up all of his belongings. He was well known for giving to needy people, especially children. There are may stories and tales of him helping out children in need.
The practice of hanging up stockings originated with Saint Nicholas. As the ancient legend goes, Saint Nicholas was known to throw small bags of gold coins into the open windows of poor homes. After one bag of gold fell into the stocking of a child, news got around. Children soon began hanging their stocking by their chimneys "in hopes that St. Nicholas soon would be there".
It wasn't until the 1800's that the spirit of St. Nicholas' life evolved into the creation of Santa Claus. And, this happened  in America. Santa Claus emerged (or evolved) from the stories and legends of St. Nicholas. Santa Claus was kind and generous to children. Unlike "St. Nick", Santa Claus is largely a non-religious character.

The three pictures on this page, are a good example of the evolution from St. Nicholas and his practices, through to the arrival of Santa Claus and the traditions of modern Christmas.
