Good 45º very overcast gloomy still drizzly morning. On the news they just
said we'd get 80º next week! OMG. Everything this rain has soaked will grow two
feet!

Here's a recipe that came from a high school pal and former LAPD, Steve
Geon.... Thanks Steve!
EASY TORTILLA SOUP:
Original recipe makes 6 servings
1 (15 ounce) can whole kernel corn, drained ( I substitute Trader Joes Corn Salsa)
2 (14.5 ounce) cans chicken broth (you should have extra can on hand in case you want more broth)
1 (10 ounce) can chunk chicken (I buy broasted chicken)
1 (15 ounce) can black beans (drained)
1 diced avocado, onion, cilantro and oregano to add to soup as deserved
1 (10 ounce) can diced tomatoes with green chile peppers, drained (I use Homeboy Salsa from Ralphs)

Directions
1. Open the cans of corn, chicken broth, chunk chicken, black beans, and diced tomatoes with green chilies. Pour everything into a large saucepan or stock pot. Simmer over medium heat until chicken is heated through.
2. Crumble Tortilla chips into bowl and pour soup over it.
3. Have diced avocado, onions, oregano, and cilantro to flavor as desired.

As for the carmelized onions from yesterday, the recipe was told to me by Liz (aka Lizardbreath) my dental hygienist. Sorry Liz, forgot it was you. Brain fart. And yes, they are soooooooooooo good. Great idea.

Yesterday after running a few errands (post office to mail
Aaron's late birthday present... and dropped of a bunch of Wine Spectator
magazines at the Kitchen Company for one of the employees...) the "gang" met up
at Blondie's for happy hour. In the shopping center on SW G Street in Grants
Pass.
Jennifer snuck out of work early (Kitchen Company) and
joined us... Jeannie and Bill, and the instigators Dee and Dale. We had wine
(the guys had habañero/passion fruit martinis) and hors d'oeuvres. Nice! I had
the Herding Cats Chard (made in South Africa) and I like it....
although the
other girls are wine critics and don't. They stuck with Kendall Jackson
Chard. Sorry, I guess I'm just the no class country bumpkin! Fine with me. I wear jeans and my wine is less expensive!
Good thing I had some doggie treats in my purse as Dee and
Dale's Sami who was in their SUV saw me and she got a couple and also Jeannie
and Bill's Chaka in the back of their Jeep got a couple. Happy pups! Came home
to my happy pup and glad to run outside cat! At least the rain had stopped.
