Good 36º cloudy drizzling morning. Another 1/2" since yesterday.
Yesterday I wanted to do some comparison shopping for dog food and wine and stuff....
So, I went to Goodwill first and dropped off some stuff. I'm making an attempt to get rid of "stuff"!!
Then to Wal-Mart.
I checked their prices and was disappointed in the quantity and quality of canned dog food they had. Their prices were the same as Winco
(right across the street) but 80¢ a can cheaper than at Safeway. Wal-Mart's wine was $2-3.00 more than Safeway, as was Winco's.
Then to Safeway
for wine and other stuff. It started raining while I was in there... and continued. The "box boy" said it was raining and I said, "that is why I have this"... an umbrella in my purse. He laughed and said if he used his umbrella to bring the shopping carts back up to the front of the store he gets called "Mary Poppins"!!!
The Wal-Mart and Winco have a huge amount of items but both of them are wayyyy tooo big. I don't enjoy shopping there. You have to walk miles to get things!
But, I did have a great conversation with a gal at Wal-Mart. She had been in the US Army, stationed in Korea and then at Fort Bliss Texas. Later she was an Oregon National Guard. Neat gal! Then coming out of Wal-Mart I ran into a guy, Viet Nam Veteran, Bill Jackson, who used to be an officer at the Elks Lodge and after Jerry passed away he took about 30 pairs of jeans (Levis and Prison Blues) that had been Jerry's over to the Veterans Rehab Center in White City. He said the vets were thrilled with the jeans!
Easy and Delish!!!
1 7.5oz tub Philadelphia Cream Cheese Spread
2 T. (about half of a 1oz pkg) Taco Bell Taco Seasoning Mix
2 T. milk
3 cups shredded cooked chicken (breasts or thighs)
1 15oz can black beans, rinsed
1 14oz can diced tomatoes, drained
2 green onions, sliced
3 6" flour tortillas
3/4 cup Mexican Style Four Cheese
1. Preheat oven to 375º
2. Mix cream cheese, taco seasoning, and milk until blended.
3. Combine the next four ingredients (milk, chicken, beans, & tomatoes) in a large bowl. Add 1/2 the cream cheese mixture and mix lightly
4. Spread 1/3 of the chicken mixture in the bottom of a 9" pie plate and top with 1 tortilla. Top with another 1/3 of the chicken mixture and 1/4 cup of the cheese and 1 tortilla. Top with remaining chicken mixture and shredded cheese and remaining tortilla. Top with remaining cream cheese mixture and shredded cheese and cover.
5. Bake 25 minutes, or until heated through, uncover last 5 minutes.

For dinner I tossed some peeled baby carrots with olive oil and a little Lawry's Garlic Salt and cooked them in the Air Fryer at 250º for 25 minutes.... then put in the marinated salmon and cooked that at 370º for 12 minutes. PERFECT!!!!
