Yesterday, the best laid plans, didn't all pan
out, but it worked. Brunch with the 'gang' ... Dee and Dale had church, Tom and
Kathy had church, Tammy was going to lunch with girlfriends, Patty and Cliff had
some excuse, Bill hurt his back and he and Jeannie couldn't make it, PJ and Dave
couldn't make it as she had pet-sitting. So, at least Brian, Jen, Tucker, and
Sami made it and along with Jennifer and her friend Mike. We ate at Tap Rock on the river in Grants Pass. We had good food and
good conversation. Of course 2 mimosas and all I wanted afterwards was a nap!
The buffet was all set up...
It was gloomy and rainy but the view was
great...
Across the river in the park were some geese and
their babies...
Sami had French toast with whipped cream, ergo
the whipped cream moustache!
I had fresh pineapple, cheese blintz with
strawberries, scrambled eggs, blackened fish, and eggs Bennie. OMGOOD.

Mike is and going to do some work for me....
weed-eating and my burn pile. He was involved with
fire-fighting-rescue-management, etc. Good to have around. He can save cats in
trees!
Ok, so early Saturday I made the potato soup.
Although I didn't have the ingredients on the recipe I faked it and put in my
own fridge and cupboard ideas... I had 7 Yukon Gold potatoes and two heads of
garlic. I sliced off the top of the garlic heads, drizzled with olive oil, and
topped with some toasted onion sea salt.
Wrapped them in foil. Baked the potatoes and
garlic (350º 1 hour). Let them cool. No shallots or celery so cut up some leeks
and sauteéd them in the butter with the flour....
Add in the chicken stock slowly and stir until
thick...
Peel and dice the potatoes... mash a couple into
the broth mixture and then add the rest of the diced.. Squeezed the cooked
garlic out of the skin and added that in also...
Didn't have regular cream cheese so added the
soft jalapeño cream cheese
and some grated yellow and white
cheese... let it all melt then added in the chopped cooked boneless skinless
chicken thighs... I didn't have any corn so I added in corn soup and didn't use
the milk as it wasn't needed...
I did put in some homemade pesto at the end. Put
it all in the crockpot to keep warm.... and added a tad more
cheese!
I chopped some fresh chives to put on top when I
served it.
OMGOOOOOD!!!!!
