Good Cop ~ Scallops/Shrimp Dinner ~ Lemon Cream Pie Day

Here is a great cop story....

Yesterday I made cards, vacuumed, dusted, dishes, and some laundry. The harsh reality of this kind of excitement is just boundless!
Dinner was scallops. One of my all time favorite recipes from Rachael Ray from about 15 years ago.....
3 tablespoons extra-virgin olive oil or just plain olive oil!
1 shallot, chopped
2 (14 ounce) cans quartered artichoke hearts in water, drained (for me I use just one can) (last night I used artichoke hearts in oil)
Salt and pepper
1/4 cup parsley leaves, chopped (didn't have any)
2 tablespoons capers, drained I use 1 T! or too salty.....
16 sea scallops (I used a package of scallops and a handful of shrimp)
1/2 cup dry vermouth NOW...
she used vermouth, but I prefer lemon juice! Mmmm....
1-2 pats butter

Heat a large nonstick skillet over medium high heat. Add 2 turns of the pan of olive oil, about 2 tablespoons and the chopped shallots to the pan. Cook shallots in oil a minute or so, add artichoke hearts and toss to heat through. Season artichokes with salt and pepper and combine with parsley and capers. I also added chopped tomato! (because I LOVE tomato) Transfer artichokes to a serving dish.

Wipe out pan and return to the heat, raising heat a bit. Season drained and trimmed scallops with salt and pepper. Add 1 turn of olive oil to the very hot pan and immediately place the scallops in the pan. Sear the scallops in a single layer, causing them to caramelize, 2 minutes on each side. Add (vermouth) lemon juice to the pan and (cook out the alcohol) add a pat of butter, 1 to 2 minutes. Arrange the scallops in vermouth over top of the artichokes and serve.(the lemon juice and butter make it creamy and since it's seafood the lemon boost flavor) I served it over the Mexican Infused rice. OMGOOOOOOD!!!!
