I called to get an appointment with the Ear Nose Throat doc and was told since I hadn't seen him in a couple of years I have to get a referral by my GP! Whaaaaaaa? So, called my GP a week ago and yesterday the ENT office called to say I had a referral and I could make an appointment. Of course the soonest I can get in is May 4th!!!!!!!!!!!!!!!!!!!!!!!!!!!!! Whaaaaaaaaaaaaaaaaaa????????????????????????? 2½ MONTHS until I can see the doc? It took that long to get an appointment with the pulmonary specialist! This is ridiculous! I am PISSED! Never never never in my life

Took a ride into Grants Pass yesterday and went to Sears. Bought a new refrigerator. It's a Kenmore 23 cu ft side by side white. Mine is 15 years old, leaks around the seals, noisy, not energy efficient, etc etc etc. So the new one will be here the end of the month.
Stopped in at Gooseberries, a health food grocery store. Looked high and low for quinoa (pronounced ki:nwa). Cooked quinoa is similar in flavor, texture and consistency to both rice and couscous, but it is much more nutritious. Try substituting this superfood for rice or couscous in all sorts of recipes--stir fry, soup, casseroles and more-- to reinvent it as a high-protein meal. Finally asked the clerk if they had any and she had never even heard of it! I told Jeannie and she laughed and said I should have asked for "kin-o-a"! Sheesh.... Will continue my quest for red and black quinoa. They have the regular white and sprouted rice quinoa blend at Costco.

Soooooooooooooo............. found this recipe and decided to make it, with less than all the ingredients. I substituted several items.... Here is original recipe:
Cheesy Mac and Chicken Soup
3 1/2 cups low-sodium chicken broth
1 (16-ounce) package frozen mixed vegetables
1 (10.75-ounce) can cream of chicken soup, undiluted
2 cups chopped cooked chicken
1 (16-ounce) package pasteurized prepared cheese product, cubed
1 (20-ounce) package frozen macaroni and cheese
In a 5- to 6-quart slow cooker, combine chicken broth, mixed vegetables, cream of chicken soup, and cooked chicken.
Cover and cook on LOW setting 4 hours. Remove cover; add cheese and frozen macaroni and cheese. Cover and cook on LOW setting 2 additional hours or until cheese melts and soup is thoroughly heated.
I didn't have any frozen vegetables, I had baby carrots, onion, celery, and sweet peppers. I had chicken broth, soup, and chicken I got from Costco. I didn't have frozen mac and cheese... I had small shells and Chili Con Queso dip. the Con Queso dip is so cheesy and very mild. I also had some chicken sausage with roasted red peppers and spinach. (I did, however, add too many pasta shells, but that's ok)
Before serving up the soup I put a handful of baby spinach leaves in the bowl...
What an easy and tasty treat! I gave some to Billy and Jeannie to try for dinner. Awaiting their reply.... We had a nice visit and Jeannie gave me some of her Mom's Cheesy Rolls. I heated one in the oven and OMG it was SOOOO GOOD. I hope she gives me the recipe and maybe let me share it.
