Yesterday I took Maggie to the vets. As I pulled into the parking lot for our 1pm appointment, Dr. Ron was backing his truck up and was leaving. He got out and said I was 45 min early. Sum ting wong. Someone wrote down the wrong time. "1pm" was written on my receipt, so it must have been put in the book wrong. Anyway, he's so nice. Said what the heck, "we'll take the stitches out right here" while Maggie sits in the car. Cool. He went in the office and came out with gauze and forceps and we had a parking lot procedure!
Maggie was really happy, regardless of the look on her face. She didn't have to go inside and wait and then have a thermometer stuck in her butt!!! She was shaking at first, but calmed right down. She will now have a scar and a bald spot on her shoulder.
We came home and I made the peanut butter cookie waffles. You have to add about 3 T of flour to the mix, as it is very soft and hard to get out of the waffle iron in one piece. I used a sharp pointed knife to lift the edge and tongs to lift each one out.
But, once they cool they are crispy and GOOD!!!!

I cooked a whole chicken in the crockpot and added a box of Imagine Potato Leek Soup. When done, drained chicken in a colander and refrigerated. Refrigerate the soup also so the fat can be taken off the top. Then heat the soup, adding some of the chicken torn off and/or cut into bite size. Add mushrooms (I used the shitake dried), garlic, onion, and seasoning if needed. Place the frozen chicken/vegetable potstickers in a frying pan and coat with oil. Add 2/3 cup water, turn on med high, cook with lid on for about 8 minutes ... until water evaporated, then sauté until browned on each side. Add to soup.......


 
I added some dried basil at the last. OMG GOOD!

Oatmeal Cookie Waffles ~ Happening ~ Pro Bowl


Good 40º foggy morning. Rained a little late yesterday, about 6 in the evening... All we got was .14" and more due today.


I belong to the Ocean Mist Artichoke Club.


Their site has a lot of good information about artichokes and recipes. I took a quiz on their site and the question was how long will a cooked artichoke last in the refrigerator? Choices were 1 day, 1 week, 1 month, etc.... I said "1 Day" and I was WRONG! So I wrote them...and got a reply...

My granddaughter Alex (Jelly Bean) posted this on her FB page and said it was the BEST commercial ever. I tend to agree with her... It's the Star Wars "Bark Side" theme by the 'canine chorus'.................... Too funny. I do think the Weimaraner, in the back, is my granddog Atlas!
 

 
Then I found this.....


Yesterday I experimented with the waffle iron and cookie dough. Oatmeal cookie dough!



(A dollop of ice cream on top or an ice cream sandwich!)

The package of dough calls for 1 T water, but I put in 5 T water. Made it easier to work with. Drop by spoonfuls on the hot iron and bake 7 minutes. I experimented with size and the larger size came off the iron easier. OH BOY ARE THEY GOOD! Today is peanut butter cookies!


Patty and Cliff had a 'goodbye happening' for Dave and PJ. They will head to the gold mining fields in desert of AZ shortly and be gone a couple months. Patty had shrimp, goop, and spinach/cream cheese roll-ups she sliced. I made the Rotel/Black Bean salsa and put out cream cheese with my sweet/hot chili sauce on it. Tom and Debbie brought cocktail meatballs and pumpkin pie. YUMMMMMM!!! Oh, and I took the cookies, that disappeared fast! Maggie went along too and thoroughly enjoyed the evening with her "other mom and dad" (PJ and Dave have babysat her and Harley for a number of years when I'd go off on vacations.)


 
Really didn't get to watch much of the Pro Bowl while we were all visiting, so when I came home I caught the end of it.


Wow, neck and neck for the first half with alternating touchdowns. The National Anthem was sung by a young Air Force fellow, who did an excellent job.
 

The pre game entertainment looked like losers. The gosip on line today verifies that. The final AFC 59 NFL 41. Amazing scoring. Some fantastic plays. Can you believe a 100 point game! (Second to the 2004 game of 107 points!) Lots of records broken yesterday. After the game all the players from both sides were high fiving and hugging. Fun to see how being on opposite sides they appreciate each's playing abilities.
Looking forward to next Sunday's Super Bowl! GO PATS!!!
