Good 46º foggy morning. Yesterday we topped at 55º.
For dinner the other night I cooked a yam in the slow cooker,
scrub outside, slit in half lengthwise, put in cooker with water, on high for 3
hours.
Then I added the drained mushrooms to a pan with olive oil and
sauteéd them almost crispy.
In the big pan went leftover risotto, the drained canned
chicken, mushrooms, and diced up cooked yam. Mixed all together and heated
well.... OMGOOOD!!!!

This recipe was on Mr. Food Test Kitchen... Easy Chicken
Bubble Bake:
2 (10 oz) cans cream of chicken soup, undiluted
1 cup milk
1/2 t. dried thyme
1/2 t. salt
1/4 t. pepper
1 (16 oz) pkg frozen chopped mixed vegetables (broccoli, cauliflower,
carrots)
3 cups shredded cooked rotisserie chicken
1 (12 oz) can refrigerated biscuits, each one cut into 4ths
2 T. melted butter
1. Preheat oven to 375º. Coat a 9x13 baking dish with cooking spray.
2. In large bowl, combine soup, milk, thyme, salt, and pepper. Mix well.
Stir in vegetables and chicken. Place mixture in baking dish.
3. Bake 15 minutes, then remove from oven.
4. Meanwhile in a medium bowl combine biscuits and butter, toss until
evenly coated. Arrange biscuits over chicken mixture and bake 15-18 minutes
more, or until biscuits are golden and casserole is bubbly.
Last night, since it was Popcorn Lover's Day I had popcorn!

Then it was chair, wine, and TV. Tried to watch a couple new shows, but
they were not worth my time. Back to the good old standbys.
