Good 72º morning. I was awake at 5:30, let Maggie out to pee, came back to
bed and slept like a rock until 8:30!! That never happens. Jeannie was in a
panic and called just after I got up to check and see if I was OK. Thanks
girlfriend for worrying. Sorry. I'm normally up at 5:30 or 6. Just was sooooo
comfy.
Yesterday I made an "experimental cake". Saw it on a site (Mr. Food) and
the ingredients were simple enough.....
1 16oz can blueberry pie filling
1 15oz yellow cake mix
2 eggs
2T vegetable oil
1t vanilla extract
1/2 cup chopped walnuts
Puree the pie filling in a food processor until smooth. In a large bowl or
mixer add the cake mix, pie filling, eggs, oil, vanilla, and walnuts. Mix until
smooth. Spray bundt pan with cooking spray, pour in cake, bake 350º 50-55
min..until springs back to touch and inserted tooth pick comes out clean.
The site said the cake was "ugly" ...referring to the color
(bluish-purple). So they decorated theirs with dollops of whipped cream and
gummy worms.
I, on the other hand, sprinkled on powdered sugar. It would be awesome with
a dollop of whipped cream or a scoop of vanilla ice cream.
I made a cupcake with the mix to make sure it was good before I gave it to
Jen for her birthday... YUMMMMY!!!! Jen said it sounded like it would be good
with coffee for breakfast. She's right! Now, waiting to hear if she and the family liked it!

Dinner was at Hunan Garden in GP. Brian got Jen a 'bouquet' of balloons and
Sami and Tucker were thrilled!
Jen's present from Tucker and Sami was a ruby & diamond ring (they
picked out!)
Dinner was good. Sami had a chicken skewer and rice, Jen and Brian had
sushi, Tucker had shirmp/salmon sushi and some of Sami's chicken, Jean had chow
mein. Always, for a nibble before dinner, they serve edamame. Sooooo good!!
I had the shrimp egg foo yung. They cover theirs with lots of yummy
vegetables stir-fried with shrimp and then soy gravy poured over all. Egg foo
yung is basically eggs, bean sprouts, diced shirmp or beef or chicken,
scallions, celery ... and fried like a pancake.
Tucker showed off his chop stick abilities....
Jean brought chocolate cake and it was good!!!! Nice birthday dinner.
