Good 37º clear ice on the barn roof morning.
My breakfast was an omelette cooked in my new omelette maker... I stirred
together two eggs, a spoonful of mayonnaise (makes the eggs creamy and rich) and
added in some ricotta cheese and mini diced tomato. OMGOOOOD!!!
I leave the omelette in 12 minutes sometimes and it gets a little crusty on
the outside. I like it.
Yesterday our weather stayed pretty cool most of the morning. We did warm to 68º by 1pm... cloudy..... and then we topped at 78º.
I went out to take pictures and the woodpeckers were all over the wood
power pole. I aimed my long lens at them and they took off! I guess they thought
it was a gun and I was going to shoot them. Saw a couple in the tree...
Yesterday Brian and family went to Eugene for Sami's gymnastic competition... She won 2nd place in the Vault!! CONGRATULATIONS SAMI!!!! oxxoox
OMGOSH, the Dodgers did it!!! Clinched the NL West! Amazed me,
as I thought they were going down down down!!

A long time ago Jerry and I were both told not to take Tylenol, as we liked to drink alcohol. Me... wine, Jerry Jack in the Black and Tequila. We were told by the doctor that the Tylenol will destroy your liver so much faster if you take it and drink. Ok, then... we were told Ibuprofen was good. I have taken it for a long time and finally it had started to make my stomach uncomfortable and also didn't stop the pain like I hoped it would. So, I thought I'd try Aleve.
OMGOSH, it works sooooo much better and takes the pain out of my back and shoulder!!! I am totally amazed!!!

Ok, now... here's a good and easy recipe that combines two favorites... mac and cheese and chili beans....This from Mr. Food Test Kitchen:
1 pound elbow macaroni
1 stick (1/2 cup) butter
1/4 cup all-purpose flour
1 teaspoon ground dry mustard
1 teaspoon salt
1/2 teaspoon black pepper
2 cups milk
2 1/2 cups shredded sharp cheddar cheese,
divided
2 (15-ounce) cans chili with beans
1 cup French-fried onions
- Preheat oven to 375 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
- In a large pot, cook macaroni according to package directions; drain and set aside.
- In the same pot over medium heat, melt butter. Add flour, mustard, salt, and pepper; mix well. Gradually add milk and cook until thickened, stirring constantly. Add 2 cups cheese and continue stirring until melted. Remove from heat and stir in macaroni. Spoon mixture into baking dish.
- Pour chili evenly over macaroni and cheese, and top with remaining 1/2 cup cheese. Sprinkle French-fried onions over top.
- Bake 25 to 30 minutes, or until heated through and golden.
Dinner last night was some of Omaha Steaks Mini Crab Cakes... and
some Schwans Fire-Roasted Veggies... OMGOOD~!!!
