Good 55º extremely smokey morning.
This is tooooooo cute. A spoiled baby deer getting tummy
scratching...
Yesterday the smoke was HORRIBLE! By noon it was 81º and by
3pm it was 95º. 5pm 96º and so smokey my mountain was almost obliterated!
Hilarious... Hill-liary was worried about the polls and Trump
getting ahead, so...................

Who's your daddy?
Two years ago today my Maggie left us. I so miss that sweet pup! Always
close to me. ♥ ♥
Dinner was stir-fry.... lots of veggies and soba noodles and fake crab. I
know, I know... if you don't like it use real crab!
Drain artichoke hearts and olives, chop some green onions, celery, and
tomatoes.....
Sauté mushrooms first then add in onion and celery... next the crab and
tomatoes, stir well....
With the soba noodles comes a packet of seasoning.. add that and 1/3 cup
water, break up noodles and stir in. I then added about 1/3 cup of the creamy
garlic sauce.....
OMGOOOOOOOOOD!
Then it was chair time, wine, and TV. The Bruise was running around like
crazy chasing a ball!
And outside the buck showed up for a snack off the deer block and a drink
of water. Then he hopped the fence to the pasture and munched on grape
leaves...

National Sponge Cake Day
Here is a great 3 Ingredient Italian Sponge Cake
recipe:
6 eggs separated
1 cup sugar
1 cup cake flour
1. Cut wax paper or use parchment paper to line 2 round 9"
cake pans.
2. Separate eggs, putting the whites in a large mixer bowl
and the yolks in a small mixer bowl.
3. Add 1/2 cup sugar to whites and beat until very
stiff.
4. Add 1/2 cup sugar to yolks and beat until very thick and a
light yellow color.
5. Fold egg yolk mixture into whites.
6. Fold flour in using 1/3 cup each time until well
mixed.
7. Don't over mix.
8. Pour into prepared pans.
9. Bake 350º 30 minutes, or until inserted toothpick comes
out dry.
10. Cool a few minutes and remove from pan and remove wax
paper.
11. Cool completely.
12. Fill with custard cream. Serve with whipped cream or
whipped topping.
Custard cream:
1 3½ oz box vanilla pudding (or chocolate or
lemon)
3/4 cup whole milk
1/2 pint heavy cream, equal to 1 cup
1 t. vanilla extract
Mix all ingredients together until thick. Place in
refrigerator til set. Spread on completely cooled cake.
