Yesterday was exciting. Not. I picked up dog poo and watered. Then I went through a box of photos and paperwork, OLD paperwork.... my grammar school grade cards, dog licenses, pedigree papers for my dogs, letters I wrote to mom and dad, etc. Found these photos of pals...

Oven Fried Zucchini Chips

Guess I'll pick up some zucchini next market run.
3 medium zucchini
1 egg, beaten
2 T. Italian salad dressing (low cal or not)
1/2 cup Panko
2 T grated Parmesan cheese
1/8 t. ground pepper
Vegetable cooking spray
Cut zucchini into 1/4" thick slices, set aside.
Combine egg and Italian dressing, stir well.
Combine Panko, cheese, and pepper in bowl.
Dip zucchini in egg mixture, dredge in Panko mixture. Place on
baking sheet coated with cooking spray. Bake 475º for 5 minutes. Turn and bake 5
minutes more, until golden.
Serve with ranch dressing for dipping.
As always the Olympics were amazing. An interview with Michael Phelps
fiance and his mom was nice. That baby, Boomer, of his is sooooo adorable.
Phelps said he's retiring, but will go to Tokyo for the next Olympics.

Filet Mignon:
The most expensive cut of beef comes from the small end of the
tenderloin, and accounts for less than 1% of the entire carcass. Boneless, it is
ideally 2½ inches thick, and 1½ - 3 inches in diameter. The tenderloin runs
across the back of the steer. Because this area of the animal is not
weight-bearing, the connective tissue is not toughened by exercise. This results
in extremely tender meat, the most tender of all beef cuts. It is lightly
marbled and mild flavored compared to other cuts, and is best served rare or
medium rare.
