I took the computer into Grants Pass on Tuesday. As I passed the 76 gas station here
in Rogue River I saw these firefighters who had come in from Flagstaff AZ to
help fight our fires......
God Bless them!
Since Tuesday was National Cheesecake Day I decided to make a cheesecake,
but instead of one cake I used my new individual cupcake sized mini cheesecake
pan...
And.... instead of the traditional cheesecake I made it with the new Philly
Jalapeño Cream Cheese...
This recipe for 6 mini cheesecakes: Make the crust with graham cracker
crumbs, 1 cup + 3 T sugar + 3 T melted butter. Mix well and press into bottom of
pan. Bake 10 minutes at 325º. (You will have leftover crumbs.) Then in electric
mixer put 2 tubs of the Jalapeño cream cheese with 1 t. lemon extract (instead
of vanilla), and 1/2 cup sugar...mix well. Then add 1/2 cup Greek yogurt (instead of sour cream),
mixing well.... and then add 2 eggs, mixing well. Spoon into crusts and bake for
45 minutes at 325º. OMGOOD!!!! Spicy, so for those of you with
delicate palates, don't make it for you...but make if for the person in the
house who likes SPICE!
I will be making these again!
Yesterday I left here 9-ish to get my computer. The street maintenance guy
was putting up a new curve sign where the accident took place.
Nice guy. We laughed and joked about that Prius going 20' off the ground,
topping the tree, landing on the shed, and slipping off....and the driver and
passenger disappearing! (see the Smilebox on July 29th blog)
I got my computer from Turk, came home... smoke still hanging in the air...
A thousand times worse than any bad day of smog in Los Angeles!!!
Yesterday I spent the rest of the day catching up. Supposed to get some
rain, 20% chance downgraded from "look out a thunder storm on the way~!" to nada
and 83º. Satellite shows clouds over the coast but nothing here in our
corner...
Looks like we may have smokey conditions for the rest of this month! ICK.
The fire in the Galice area has consumed 3,700 acres. VALUES AT
RISK: Boaters and campers on the Rogue River, Wild and Scenic River
below Graves Creek, economic considerations associated with recreation, Black
Bar Lodge (18 structures), Zane Grey Historical Cabin (9 structures), Marial
Lodge, Rogue River Ranch, cultural resources, threatened & endangered
species habitat, late successional reserves, fisheries and wildlife. Parts of
the Rogue River are closed to boaters. The Hellgate boats are still running, but
on a day to day basis depending on the fire and the smoke.
The Douglas County fires have consumed 25,396 acres and 470 homes are still
in danger.
We just hung out inside, except for a few potty breaks for the
pooches and kitty...

boy. He was such a great cat for 22 years!!!
I can't believe it's been almost 6 months since he left for Heaven to be
with Jerry!

National Raspberry Cream Pie Day

25 whole Oreo Chocolate Sandwich
Cookies

Tablespoons Butter, Melted

cup (generous) Raspberries
3
Tablespoons Sugar

containers (6 Ounce Each) Raspberry
Yogurt

package (3.4 Ounch) Instant Vanilla Pudding
Mix

cup Heavy Whipping Cream
Extra Raspberries For

To make the crust, preheat oven to 350 degrees. Crust cookies in a food
processor (or smash in a Ziploc bag with a rolling pin). Stir in melted butter
until all combined. Pour into a regular pie pan and press crumbs all over the
pan and up the sides. Bake for 3 to 4 minutes---just long enough for it to set.
Cool crust completely.
Place raspberries on a plate or in an empty pan. Smash them with a fork, then sprinkle on 3 tablespoons of sugar. Stir together and allow to sit for 15 minutes.
In the bowl of an electric mixer, combine raspberry yogurt with the instant vanilla pudding mix (just the powder itself.) Beat on low until combined, about 1 minute. Pour in heavy cream and whip on low for 30 seconds. Stop the mixer and scrape down the bowl with a rubber spatula. Turn mixer on medium-high speed and beat for two minutes, or until mixture is thick.
Turn off mixer, then fold in raspberries until just combined. Pour into cooled pie pan and spread evenly. Freeze for two hours, or until very firm. Cut into slices and top each slice with cookie crumbs, dollops of whipped cream, and extra raspberries. Keep in freezer, allowing time to thaw before serving.
