Dinner last night was fresh salmon,  mandarin orange  simmer sauce, mini squash, and tomatoes.

Put the squash in a bowl and drizzle olive oil on them.
Then sprinkle on the Panko crumbs. Heat oil in a skillet and cook over medium heat with the lid on for 6-8 minutes, remove lid and sauté. Add oil to another skillet and sauté the salmon on both sides, add some simmer sauce and continue cooking until done.

 

OUTSTANDING!!!!
