Good 46º cloudy morning.
Yesterday the sun came out and then it went away again. Dang. By noon we
were only at 57º. The 78º on Thursday was AWESOME!
I put the corned beef under the running water and washed it off real well
and then soaked it in a bowl of water to get rid of the salty and spices that
are added to it.
I cut up the leeks and carrots, added to bottom of Crock*Pot, then the
beef, topped with brown sugar, and the Guinness went into the pot...
Two hours before the end of the cooking time I cut up some cabbage and
added that into the pot.
I cooked and mashed 3 potatoes. Mashing them with butter, buttermilk, salt,
pepper, and roasted garlic seasoning. Then I stirred in cooked cabbage to make
colcannon.
I topped the corned beef with some sour cream horseradish. OMGOOOOOOOD!!!
Corned beef was PERFECT! Didn't want to stop eating it!!!
Our local Medford Commisioner, Doug Breidenthal (friend) is celebrating his
46th birthday today. HAPPY BIRTHDAY DOUG!!!
