Yesterday at noon for lunch.... Jennifer, Mike, Jennifer's cousin Sarah, and her NY
friend Mike (sheesh... first everyone is named Dave and now everyone is Mike!) meeting at Tap Rock. Since the "tourists" were coming this is such a nice
place to show off the river and the area. So, for me, twice in one week! I was
the "on time/early bird" so I got us a table on the deck and a glass of wine for
me...
Across the river by Riverside Park the Canadian Geese were out in force!
Just an absolutely perfect day~! Everyone finally arrived, albeit late.
Sarah and Mike are super nice folks and it was such fun to get to meet them
and chat. Mike flew from NY to Olympia WA and they are on an antique collecting
trip. Mike has a website that is so interesting... http://www.toastercentral.com/
After lunch they headed south to California. In Fort Jones there is a 41
mile 'garage sale' !!!
Jennifer had the BBQ Ranch Chicken Chopped Salad (rotisserie-style chicken,
chopped romaine, avocado, Tillamook Cheddar cheese, black beans, tomatoes, corn,
sliced black olives, green onion, and BBQ Ranch dressing!) It doesn't look that
big in the picture but she shared it with Sarah and Mike... three plates of
salad!!!!
Jennifer's Mike enjoyed the same thing I had there on Wednesday,
turkey/bacon/tomato/cranberry cream cheese sandwich! I had Fish and Chips.
OMGOOOOOD!!!!
GOSH those 'chips' were awesome!
Our favorite waiter, Lance, was there, but our table wasn't in his
area...
Brian gave me a bunch of State Farm pens to give him and he was ecstatic! I
even got a hug!!!
I wore my silly shirt "SMILE if you aren't wearing any underwear" !! Gets a
lot of laughs!
Too much lunch so I wasn't even hungry to fix dinner. Snacked.

National Applesauce Cake Day
BUSY DAY APPLESAUCE CAKE | |
1 (18.25 oz.) pkg. yellow cake mix
1/3 c. oil 1 1/4 tsp. ground cinnamon 1/2 tsp. ground cloves 1 c. applesauce 3 eggs Ground nutmeg
GLAZE:
1 c. sifted powdered sugar
1/4 tsp. rum extract 1 tsp. light corn syrup 2 to 3 tbsp. applesauce
In large mixing bowl, combine cake mix, applesauce, oil, eggs,
cinnamon, 3/4 teaspoon nutmeg and cloves. Mix at low speed of electric mixer
until moist, then at high speed for 2 minutes.
Pour mixture into greased and floured bundt pan.
Bake at 350 degrees for 50 minutes or until toothpick placed in center comes out
clean. Cool in pan 15 minutes. Invert onto serving plate and cool.
Combine powdered sugar, rum extract, corn syrup and applesauce in mixing bowl. Mix until smooth and of drizzling consistency. Drizzle glaze over top of cake. Sprinkle lightly with nutmeg. 12 servings. |
