Yesterday I was working on a bunch of stuff at my desk. Trying to
straighten out things and pay bills. UGH. Mike called and was on his way in from
Medford and said he could stop and weed-eat, stack wood for me for a couple of
hours. YEAH, have fire wood on the porch now! Got cold yesterday afternoon so it
was time for a fire in the wood stove. Nice!
PJ stopped by with some "Amish butter" that Patty left with her for me and
some of Cliff's smoked pork. YUMMMO!!
How about a quick easy casserole for dinner tonight...
Beef Rice Casserole
1 # lean ground beef
1 (6oz) package quick cooking wild rice mix
1 (11 oz) can condensed tomato soup
1/4 c milk
1 (8 oz) pkg frozen mixed vegetables
1/4 c black olives chopped
1 c mozzarella cheese shredded
Preheat oven to 350º. Spray casserole dish with cooking spray.
In large skillet over med heat cook beef for 8-10 minutes, until brown. Drain
meat. Make rice. Stir rice mixture, soup, and milk into beef. Spoon into
casserole dish and mix with remaining ingredients except cheese. Cover and bake
for 30 minutes. Sprinkle with cheese and bake uncovered 8-10 minutes until
cheese melts.

Dinner was crab cakes (from Safeway) and salad... red bell pepper, celery,
baby spinach, grape tomatoes.
I baked the crab cakes and topped them with some French Aioli Mayonnaise
(Harry & David) .. which is garlic flavored mayo. I drizzled some Fresh
Basil olive oil on the salad and a pinch of sea salt. OMGOOOOOOD!!!

Love the wedding photo of the guys. What's with them all having a mustach? John had one too around that time.
Weird about the five year old having a baby! You are so right! So wrong in so many levels.
