Frozen Fog ~ Creamy Bacon Potatoes ~ Alyssa Santisteven ~ Cupcake Day

Good  32º super foggy morning.... again!

Stayed frozen yesterday until 1pm, when the fog cleared and then we topped at 47º. 

I ran a quick errand to the post office to mail off some Christmas stuff. Thank goodness for heated steering wheel and heated seats!

Now, I know you will say that canned potatoes are not on your list, but wait. Try this recipe and you will be awed and amazed!

4  15oz cans sliced potatoes, drained

2  10.75 oz cans cream of celery soup

16 oz container of sour cream

10 slices of bacon, cooked crispy and crumbled

Optional: green onions, thinly sliced

1. Put the potatoes in the bottom of a 6qt crock pot

2. Mix together the soup, sour cream, and bacon

3. Spoon over potatoes and stir gently

4. Cover and cook on low for 4-5 hours

5. Serve topped with green onion slices, if desired

Later dinner was an Omaha Steaks breaded veal patty (cooked in air fryer after thawing at 370º for 14 minutes, drizzled with olive oil and sprinkled with Lawry's Garlic salt) and green beans with yam. A little of my sweet/hot chili sauce on the side.

Then it was chair, wine, and TV... NCIS Miami, NCIS Los Angeles, and NYPD Blue

National Lemon Cupcake Day

Pucker up your lips. No, you're not about to be kissed. But, you should be about to bite into a tart, yet sweet, lemon cupcake. Why? Because today is National Lemon Cupcake Day.

Not everyone loves the flavor of lemon. It's too tart for some. Certainly those who do enjoy the tart, yet refreshing taste, will agree that the lemon cupcake fully deserves it's day for recognition.
