Good 48º clear sunny morning.
On a sad note, my friend Trish Bowler's mom, Ruth, passed away last night. T's husband is John Bowler (LASD Ret.)
My heart goes out to you Trish and to your family. May she rest in peace.

So, "Marmaduke" has gone home to be with his family, but is missed here. I
did a short video of At-ta-less (as my grandson, Jack, would call him when he
was little) .... Atlas:
The more I watched that video and listened to my voice, I thought, OMG I
sound like my friend Sandy (Todoran) !!!
I guess we take on aspects* of our friends/spouses when we spend a lot of
time together!

National Cheesecake Day
Here are a bunch of recipes:
But.... this one I have been making for years and years, since the '60's
from McCall's Cookbook. Easy. Good!
(This page in my cookbook is a mess! Made it a lot! Brian's fav.)
McCall's Best Cheesecake
Crust: 3/4 cup gram-cracker crumbs
1 T. sugar
1 T. melted butter or margarine
Filling :
3 pkg 8oz size cream cheese
4 eggs
1 t. vanilla extract
1 c. sugar
Topping:
2 c. dairy sour cream
1 T. sugar
1 T. vanilla extract
1. Preheat oven to 375º. Make crust: in med bowl combine the 3 ingredients,
mix well. Spread evenly over bottom of 9" spring-form pan, pressing lightly with
fingers. Refrigerate while filling is being prepared
2. In large electric mixer bowl, at med speed, beat cheese until light. Add
eggs, vanilla, and sugar, continue beating until creamy and light. Pour into
crust and bake 35 minutes.
3. In medium bowl with wooden spoon, beat together sour cream, sugar, and
vanilla. Remove cheesecake from oven, spread on topping evenly and bake another
5 minutes. Cool in pan on wire rack. Then refrigerate 5 hours or overnight.
4. Remove sides of spring-form pan, cut into wedges.
To easily make gram-cracker crumbs: put 10 crackers in zip bag and crush
with rolling pin.
NOW for the easiest cheesecake ever... no bake:
Mix well:
8 oz Mascarpone cheese
1/2 container Cool Whip
2 T. honey
Put into 3 wide long stemmed glasses (red wine glasses) or wide-mouth 1/2
pint canning jars... Slice strawberries and macerate in Triple Sec or Gran
Marnier ..... or macerate blueberries and raspberries in sugar and dark
rum...
To serve: strain berries and spoon over cream mixture. HEAVEN! Serves only
3, so you may want to double or triple recipe!
