Brian showed up about 8:30 last night to pick up Atlas. It was a very quiet
night. No "Marmaduke" (as Jeannie calls him) sleeping up against me last night.
I miss the big guy! Here is he and Maggie trying hard to keep the old eyeballs
open while I sit in my chair sipping a glass of wine...

Yesterday I ordered some quinoa flakes. Had never heard of them until I saw
this recipe on http://www.healthfulpursuit.com/
Leanne's recipes are all healthy and gluten free. So, anyway...... I ordered the
quinoa flakes from http://vitacost.com and also some "powered peanut
butter"! Regular peanut butter has 94 calories in a tablespoon. This pb has had
the oils squeezed out and then dried. Mix with water and in 2 tablespoons there
are only 45 calories.
It shall be
interesting. I got the plain PB and the one with chocolate! Will let you know
if all the stuff I read and watched about it tasting "just like regular peanut
butter" are true.
Going back to my blog of two years ago on this date, I was writing about
cooking quinoa! Hmmm... and babysitting Atlas! Funny.
Today is a special birthday.... Robbie Wilkinson is celebrating his 55th.
Doesn't seem possible. He was our babysitter when he was 15! HAPPY BIRTHDAY

Dinner last night was just a sandwich...easy. I had some fake crab, pepper
flavored mayonnaise (which is soooooo good!), avocado, baby cukes, and some new
chips.....

National Lasagna Day
(This is a favorite... easy too.)
Mexican Lasagna
1 pound ground beef 1 lg can refried beans
2 t. ground oregano 2 t. ground cumin
1 t. garlic powder 12 uncooked lasagna
noodles
2½ c bottled salsa 2 c. sour cream
1 c. diced onions 2 cans sliced olives
2 cups grated cheese diced tomatoes
3 green onions chopped
Combine ground beef with refried beans in large bowl. Add oregano, cumin,
and garlic powder. Mix well. (Hands are best) Spray a 13x9 pan with cooking
spray. Place uncooked noodles 4 across, overlap a little, and break end off one
and place sideways, covering the entire bottom of the pan.
Spread half the bean/beef mixture on noodles. Top with more noodles and the
remaining beef/bean mixture. Top with the rest of the noodles.
Combine salsa and water, mix well, pour over all. Cover with foil, bake
350º for 90 minutes. Make sure to place on cookie sheet, as it tends to
overflow.
Combine sour cream with onions and olives. Spoon over top of casserole. Top
with grated cheese and bake uncovered until cheese melts. Remove from oven and
top with green onions and tomatoes.
