Good 48º dark cloudy morning.
 
 
The weather yesterday started dark and cloudy and then the clouds moved around a bit on and off.... some sun came through for 2-3 minutes, a tiny bit!
 
 
According the the AccuWeather warning we are supposed to have winds and rain and snow on the mountains tonight through tomorrow.

Interesting about Oregon's flag....


 
The state flag of Oregon is one of the most unique in the United States of America. It is currently the only flag that is two-sided, which means that both sides of the flag have different patterns. The state flag's current design was adopted on February 26, 1925. The front, or obverse side of the flag, features the official state seal in gold, which is surrounded by 33 stars, symbolizing Oregon as the 33rd state to join the Union. The back, or reverse side of the flag, features Oregon's state animal, the beaver, fully stretched on a log.
 
 
 

ONE-POT CHICKEN ALFREDO

One-Pot Chicken Alfredo is a glorious dish that starts with tender pan-fried chicken breast finished in a luxurious cream sauce that will blow your mind. A simple recipe, the fettuccine is cooked right in the sauce in the same skillet!


 
  • 2 tablespoons unsalted butter
  • 1 pound boneless skinless chicken breast, cut into bite-size pieces
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 cup (8-ounces) Chardonnay (white wine)
  • 1 cup (8-ounces) chicken stock
  • 1 cup heavy cream
  • 8 ounces uncooked fettuccine pasta (or whatever pasta you prefer)
  • 4 ounces fresh grated Parmesan cheese, about 2 cups
  • 1/4 teaspoon ground nutmeg
  • (optional) chopped fresh parsley to garnish
 
  1. Warm a large skillet over medium-high heat, add butter. Once butter is melted add chicken and sprinkle with salt and pepper. Cook until browned, about 10 minutes. Add wine to skillet, use a rubber spatula to scrape the browned bits from the bottom of the skillet. Add broth and cream. Stir to combine.
  2. Add uncooked pasta to skillet. Stir to combine and coat pasta in the sauce (the pasta will cook right in the sauce absorbing the sauce and becoming incredibly flavorful). Bring to a boil.
  3. Once boiling, cover and cook 7-9 minutes until pasta is cooked al dente (with a bite to it). If you are using long pasta (spaghetti, fettuccine, etc) you will need to stir every minute or so after 7 minutes to make sure the pasta is combined and cooking in the sauce.
  4. Once pasta is cooked al dente, remove from heat. Stir in Parmesan cheese and nutmeg. If necessary, add salt and pepper to taste. Garnish with fresh parsley (or basil would be good too).
  5. Serve and enjoy!

DONNA'S NOTES

  1. The sauce will thicken as it cools. If sauce gets too thick, you can add a splash of wine or chicken broth and give it a stir. It will loosen the sauce up.
  2. If you are sensitive to alcohol, you can substitute white grape juice or chicken stock. But, I highly recommend using  Chardonnay.

National Burrito Day is observed annually on the first Thursday in April.
A burrito is a heavy tortilla wrapped around meat, cheese, tomato, rice, beans, vegetables, and sauces.  Burritos can be filled with ground beef, shredded chicken, shredded beef or shredded pork.  Bean choices often include black, red, whole or refried beans.  Vegetables can be grilled or fresh.  Cumin, chili powder, and oregano are typical spices used to give the burritos an authentic Mexican flavor.  Chimichangas are burritos that have been deep fried.
The word burrito first appeared in the Dictionary of Mexicanisms in 1895.  It is the term used in the Guanajuato region and means little donkey in Spanish.  It is possible that it stems from the appearance of the packs and bedrolls donkeys used to carry.  In other regions of Mexico, similar types of food are known as flauta.
The burrito was introduced in the United States in the 1930s at the El Cholo Spanish Café in Los Angeles.
