Yesterday we got a bit of rain, hardly enough to measure, and the wind, heavy rain, etc we were supposed to get last night didn't arrive!

Interesting about a cat.........
Creme Puff (August 3, 1967 – August 6, 2005) was a cat, owned by Jake Perry of Austin, Texas, who died aged 38 years and 3 days. She was the oldest cat ever recorded, according to the 2010 edition of Guinness World Records. Perry had another cat, Granpa, who was claimed to have been born in Paris in 1964 and died 1998, aged 34 years and 2 months. Granpa was posthumously awarded 1999 Cat of the Year by Cats & Kittens magazine. Granpa was featured in an earlier edition of Guinness World Records. The co-authors of at least one book have pondered whether the longevity of Perry's cats may have had something to do with an unusual diet of, among other things, bacon and eggs, asparagus, broccoli, and coffee with heavy cream, concluding that Perry "must be doing something right."

Parmesan Roasted Carrot Fries
Prep Time:10 minutes Cook Time:20 minutesTotal Time:30 minutes Servings: 6
Sweet roasted carrot fries covered with crispy Parmesan cheese!
- 2 pounds carrots, peeled and sliced into 1/4 in thick ‘fries’
- 1 tablespoon oil
- salt and pepper to taste
- 1/2 cup Parmesan cheese, grated
- Gently toss the carrot fries in the oil, salt and pepper, sprinkle on the cheese and mix to coat before spreading on them in a single layer on a silicon mat or parchment paper lined baking sheet.
- Roast in a a preheated 425º oven until tender and lightly charred, about 16-20 minutes, mixing half way through.
Note: Use a mandolin to easily slice the carrots into fries.
Option: Serve with chipotle mayo! (1/2 cup mayo and 1-2 chipotle chilies in adobe pureed in a food processor with an optional splash of lime juice.)

April 5th recognizes a food holiday that pizza lovers all across the country will enjoy. It is National Deep Dish Pizza Day.
- In ancient Greece, the Greeks covered their bread with oils, herbs and cheese which some people believe is the beginning of the pizza.
- In Byzantine Greek, the word was spelled “πίτα,” pita, meaning pie.
- A sheet of dough topped with cheese and honey, then flavored with bay leaves was developed by the Romans.
- The modern pizza had its beginning in Italy as the Neapolitan flatbread.
- The original pizza used only mozzarella cheese, mainly the highest quality buffalo mozzarella variant which was produced in the area surrounding Naples.
- It was estimated that the annual production of pizza cheese in the United States in 1997 was 2 billion pounds.
- The first United States pizza establishment opened in 1905 in New York’s Little Italy.
- Pizza has become one of America’s favorite meals.
