Good 45º cloudy morning.
Yesterday was nice again....
Mr. Tom was out and about. He is not a joiner. Always by himself. And he gets along with the geese when they show up. Strange guy!
And the geese were resting in the shade in the backyard by the tub of water....
Then Bruiser decided he wanted that spot .....
And yesterday we topped at 82º, but the clouds were moving in....

I had posted that pork shoulder roast cooked in the crock pot with pineapple chunks and brown sugar last Thursday, April 26th. I made it yesterday! Brown Sugar Pineapple Pork Roast....
6 pound pork shoulder/butt roast
20oz can pineapple chunks
1/2 cup brown sugar, packed
Put roast in slow cooker. Pour the pineapple chunks all over the roast. Sprinkle the brown sugar on top. Cover and cook on low 4-6 hours. Serve with cooking juices.
I didn't have any brown sugar so I used molasses. I cooked it on high for 4 hours then put on warm til ready to eat.
This came out perfect and soooooooooooo tender..... I had it with little potatoes and on fresh spinach with some raw carrots. Next is a pork sandwich!

Just my opinion, but some of the recipients of this "prize" were not worth it!!!!! Just sayin'..............

Since tomorrow is Cinco de Mayo here is a unique and yummy Guacamolé.... using Blue Cheese!
Blue Cheese Guacamole
Cool and creamy guacamole with the tangy hit of blue cheese
- 2 large avocados, cut into small pieces
- 1 lime, juice
- 1/4 cup blue cheese at room temperature, crumbled
- 1 jalapeno pepper, finely diced
- 1 roma/plum tomato, seeded and diced
- 1/4 cup red onion, diced
- 1 tablespoon cilantro, chopped
- 1/2 teaspoon cumin (toasted and ground)
- salt and pepper to taste
Mash everything to the desired consistency.
