Cinco de Mayo... the REAL story...
(Spanish for "fifth of May") is a celebration held on May 5. It is celebrated nationwide in the United States and regionally in Mexico, primarily in the state of Puebla, where the holiday is called El Dia de la Batalla de Puebla (English: The Day of the Battle of Puebla).The date is observed in the United States as a celebration of Mexican heritage and pride, and to commemorate the cause of freedom and democracy during the first years of the American Civil War.In the state of Puebla, the date is observed to commemorate the Mexican army's unlikely victory over French forces at the Battle of Puebla on May 5, 1862, under the leadership of General Ignacio Zaragoza Seguín. Contrary to widespread popular belief, Cinco de Mayo is not Mexico's Independence Day—the most important national patriotic holiday in Mexico—which is actually celebrated on September 16, or as we used to say, the day the new Chevy's came out!
So make some Margaritas, have some rice and beans, guacamole, pick up some tamales... traditional Mexican dishes. Celebrate with our Mexican friends a special day.
I'm into EASY chicken casseroles right now...
It's good to keep biscuit baking mix on hand for stretching food budgets and making the most of leftovers. Take this dish...with leftover chicken (or get a rotisserie cooked chicken at the store) and some Cheddar cheese, you will have a golden-crusted meal fit for a king! Make this Golden Chicken Casserole once, and we bet you'll have a whole new outlook on leftovers.
- 1 (10-1/2 -ounce) can condensed cream of chicken soup
- 1/2 cup sour cream
- 1 1/4 cups milk, divided
- 3 cups diced cooked chicken
- 1 (12-ounce) package frozen mixed vegetables
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3/4 cup biscuit baking mix
- 1/4 cup cornmeal
- 1 egg
- 2 cups (8 ounces) shredded cheddar cheese
- Preheat oven to 375 degrees F.
- In a 9- x 13-inch baking dish, combine soup, sour cream, and 1/2 cup milk; mix well. Add chicken, vegetables, salt, and pepper; mix well.
- In a medium bowl, combine baking mix, cornmeal, egg, and remaining 3/4 cup milk; mix well then spoon over chicken mixture and sprinkle with cheese.
- Bake 30 to 35 minutes, or until top is set and golden.

Yesterday stayed cloudy and cool until about noon. We warmed to 81º. The geese were back out in the backyard by the water tub most of the day. I had some old bread, so I cut it up and they loved it and so did a raven that visits!
I also got my Torani Syrup order yesterday. I used to buy it from Cash & Carry, but their site has more choices .... and I ordered it Thursday and got it Friday!!! I like the sugar free syrups... Peanut Butter, Salted Caramel, Irish Cream, Vanilla, White Chocolate, Cinnamon Vanilla, and English Toffee. They also have lots of fruit flavors, good in smoothies.
Dinner was a sandwich made with that pork shoulder. YUMMMMO!!

The United States Congress issued a Concurrent Resolution on June 7, 2005, calling on the President of the United States to issue a proclamation calling upon the people of the United States to observe Cinco de Mayo with appropriate ceremonies and activities.
According to José Alamillo, professor of ethnic studies at Washington State University in Pullman, a 2006 study found there are more than 150 official Cinco de Mayo events across the country.
Cinco de Mayo celebrations in the United States have taken on a significance beyond that in Mexico. They include displaying of banners and events highlighting Mexican culture, music and regional dancing, as well as school districts holding special events to educate students about its historical significance. In the U.S., commercial interests have capitalized on the celebration advertising Mexican products and services with an emphasis on beverages, food and music.
