Yesterday another summer like day. Clear and sunny and a high temperature of 90º. 
 
In the afternoon a few clouds did come in. Rain is predicted for later today, tonight, and Wednesday. We'll see.......... 
 
And the poppies are really going to town!

Interesting

One nut you have likely never seen in the shell is the macadamia, and for good reason. Unlike opening a peanut or a pistachio, it takes some serious muscle to extract the edible nut from its shell: 300 pounds of pressure per square inch to be exact, making it the hardest nut in the world to crack! 


Macadamia nuts are the fruits of the macadamia tree, which is native to Australia. It was the German-Australian botanist Ferdinand von Mueller who gave the genus the name Macadamia way back in 1857. The name was in honor of John Macadam, a Scottish-Australian chemist, politician, and medical teacher.
 
My Dad planted a Macadamia tree in the front yard of our house.
 
They are mostly grown in areas like Hawaii, where there is no snow or frost. When it got icy in So. Cal, Daddy would get up in the night and hose the tree off so none of the blooms would freeze and drop off.
 
Then to crack the shells, we'd use the bench vice in his shop.
Put the nuts between the two jaws and twist the handle until the shells cracked.

Salad
  • 1 (19 ounce) bag frozen cheese tortellini pasta
  • 2 orange bell peppers, cut into bite size pieces
  • 1 English cucumber, cut into quarters and sliced
  • ½ medium red onion, thinly sliced
  • 16 ounces cherry tomatoes, halved
  • 12 ounces (about 2 heaping cups) diced ham
  • 1 (14 ounce) can pineapple tidbits in 100% pineapple juice, divided
Dressing
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup pineapple juice (reserved from the can of pineapple tidbits)
  • 1 tablespoon granulated sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Gourmet Garden garlic paste or fresh grated garlic
  • 2 teaspoons Gourmet Garden Ginger Paste or fresh grated ginger
  • 1 teaspoon course ground black pepper
  1. Bring a large pot of water to a boil. Cook tortellini according to directions on the package.  Drain and set aside once cooked.
  2. Chop ham and vegetables and set aside. Reserve pineapple juice from can for the dressing. Set aside.  Combine salad ingredients in a large bowl. Set aside.
  3. In a pint size mason jar add dressing ingredients. Shake mason jar until dressing is combined.  Pour dressing over salad and gently toss with salad tongs until well coated.
  4. Serve and enjoy.
 
 

NOTES

  1. Salad is excellent the next day. If you like a lighter dressing coating make 1/2 of the dressing recipe. This gives it a nice and thick coating.
  2. If you do not have ginger paste, you can use finely diced fresh ginger or ground ginger to taste (start with 1/4 teaspoon).
  3. This is a fantastic make ahead salad. When making ahead, use 1/2 of the dressing when preparing the salad. Reserve the remaining dressing to pour over the salad before you serve. This will keep the salad nice and creamy. If you use all of the dressing initially your pasta may soak up all the dressing.

Every May 15 by proclamation of the President is Peace Officers Memorial Day.
Peace Officers Memorial Day is a part of Police Week, paying tribute to local, State and Federal law enforcement officers.
Flags are flown at half-staff in memory of those officers who have made the ultimate sacrifice. Services honoring the fallen will be conducted across the country, including Washington, D.C.
The National Law Enforcement Officers Memorial wall in Washington, D.C. features the names of more than 19,000 law enforcement officers which have been killed in the line of duty.

HISTORY
Peace Officers Memorial Day was created on October 1, 1961.  At that time, Congress asked the president to designate May 15 as a day to honor peace officers.  On October 1, 1962, John F. Kennedy signed the bill into law.  In 1994, Bill Clinton made an amendment through Public Law 103-322 that directed the United States flag be flown at half-staff on May 15.
This day was established by President Kennedy in 1962 and was canceled by OVAMIT! It was scrapped so the Black Lives Matter movement wouldn't be offended! WHAT?????? He was a POS in more ways than one!!!!

 
President Trump reinstated it! He said,
“Police officers in this country will no longer be treated like criminals. Obama decided your fallen didn’t deserve to be honored. That changes today. Americans will remember those that keep our streets safe big time.”
