Rain ~ Sun ~ Geese ~ Bruiser ~ Crockpot Chicken Chile Rice Casserole ~ Corn Chip Day


Good 33º raining hard very dark morning!
Yesterday we did get some sun and we warmed to 53º




The geese left their footprints on the barn roof....


Bruiser was out stalking birds again by the bird feeder, but again no luck!




Looks like we might be in for some more of the snowy/cold weather..

Crockpot Chicken Chile Rice Casserole
3 chicken breasts, cooked and shredded
3 cups rice, cooked
10.75 oz cream of celery soup
4 oz can diced green chiles
2 cups shredded Monterey Jack cheese
1 cup sour cream
salt and pepper to taste
optional: garnish with chopped green onions
  1. Mix everything together in a 4qt crockpot, except optional garnish
  2. Cover and cook on low for 2 hours
  3. Garnish servings with chopped green onions, if desired

Later she could have said she was born in Arizona, since it was a Territory and they didn't start keeping birth records until 1912. But, she was honest and became a 'naturalized citizen' in later years, but did grow up in Arizona in Bisbee. My grandparents were still Scottish citizens, not American. He was a mining engineer for the Lavender Pitt copper mine in Bisbee after Pancho Villa's men told them they had to leave Mexico since they weren't citizens of Mexico.

National Corn Chip Day

Today is a holiday with a crunch. One might even suggest that it is a corny holiday. Well, that's okay because today is National Tortilla Chip Day. Just a few decades ago, Americans seldom ate Corn Chips and Salsa. It's popularity has grown immensely. Today is a tribute to that rising popularity of one of America's favorite munchies.
Did you know? The corn chip recipe was brought to the U.S. from Mexico by texas businessman Elmer Doolin.

Celebrate National Tortilla Chip Day with a handful of crunchy, tasty corn chips and your favorite salsa or dip.
