Good 22º everything is frozen morning!
By 10:30am yesterday it warmed to 41º and the snow started melting off the trees...

Tater Tot Casserole
1 pound lean ground beef or turkey
1/2 yellow onion, chopped or instead season the meat with garlic powder, salt and pepper if onions aren't your thing.
10.5 oz can cream of mushroom soup
1 pound pkg frozen tater tots (or 1/2 of 32oz pkg)
1 cup frozen mixed veggies (carrots,corn,green beans,peas ..or your favorite)
1 cup Cheddar cheese, shredded (or your fav cheese)
1. Preheat oven to 375º and spray a casserole dish with cooking spray
2. Brown ground beef with onion in large skillet, drain.
3. Add the beef and onions to casserole dish.
4. Top the meat with the mixed vegetables
5. Spread the soup over the vegetables.
6. Top with tater tots
*Add cheese the last 20 minutes of baking
7. Bake 45 minutes, or until tater tots are golden brown and casserole is heated through.

A late lunch was some of Trader Joe's Steamed Chicken Soup Dumplings (that can be cooked from frozen to ready to eat in either a steamer pot or in the microwave). I chopped up lettuce and a tomato and used buffalo ranch dressing and some of Franks Sweet Chili sauce for the dumplings. SUPER good!!
