Good 38º foggy morning.
This morning we started out....
Red sky at night, sailor's delight. Red sky in the morning, sailors take warning! Rain and heavy winds and high elevation snow predicted for later today and tonight.
The red sky didn't last long, as more fog moved in.
Yesterday the sun was coming up over the mountain and bursting
through the fog.....
Didn't last long, as the fog came back! Darn! Then it
attempted again and we got sunshine!! Not as much as Saturday, but nice. More clouds too...
The turkeys were out "in force", gobbling and strutting! Show
offs!
This soup got my drool button going!
Creamy Asiago Chicken and Mushroom Tortellini
Soup
- 2 tablespoons oil or butter
- 8 ounces mushrooms, sliced
- 1 small onion, diced
- 2 cloves garlic, chopped
- 1 teaspoon thyme, chopped
- 1/4 cup flour (rice flour for gluten free)
- 1/2 cup white wine (or broth)
- 4 cups chicken broth
- 8 ounces cheese tortellini (gluten free for gluten free)
- 1/2 pound boneless and skinless chicken breasts (or thighs)
- 1/2 cup heavy/whipping cream
- 1 tablespoon dijon mustard
- 1/2 cup asiago cheese (or parmesan), grated
- salt and pepper to taste
1.Heat the oil in a
large sauce pan over medium-high heat, add the mushrooms and onions and cook
until the mushrooms have released their liquid and it has evaporated, about
10-15 minutes.
2. Mix in the
garlic, thyme and flour and cook, stirring, for a minute.
3. Add the wine and
deglaze the pan.
4. Add the broth,
tortellini and chicken, bring to a boil, reduce the heat and simmer until the
tortellini is tender and the chicken is cooked, about 10 minutes.
5. Remove the
chicken, dice or shred it and mix it back into the soup.
6. Add the cream,
mustard and asiago, let the cheese melt, season with salt and pepper to taste
and remove from heat.

National Strawberry Ice Cream Day
Today is National Strawberry Ice Cream Day! Did you know
that ice cream evolved from ancient flavored ices? As early as 3000 BC, people
in China served their guests sweet juices mixed with ice or snow.
Today, ice cream is made with a mixture of cream, milk,
sugar, and eggs. While fruity varieties of ice cream flavors are still popular
amongst many, vanilla and chocolate are the clear favorites. According to a
survey conducted by the International Ice Cream Association, strawberry is the
third most popular ice cream flavor, favored by 5.3% of the
population.
Did you know that Dolley Madison served strawberry ice cream
at President Madison’s second Inaugural Ball in 1813? Treat yourself to a
delicious bowl (or two) to celebrate National Strawberry Ice Cream
Day!
