Have you ever seen a ghost? I did. Jerry and I were traveling up north and stopped to spend the night at a motel right close to railroad tracks in Pendleton Oregon. In the night I heard the train, opened my eyes and what looked like a man was standing there looking out the window towards the train...
I had a sense of deep loss that he was feeling. So strange.
Seems as though someone had left him that really impacted his heart.
Never have seen a ghost since. Weird......
How about this.... remember Rice-A-Roni?
In 1958, Vince DeDomenico invented Rice-A-Roni by adding a dry
chicken soup mix to rice and macaroni. It was introduced in 1958 in the
Northwest United States and went nationwide four years later. Because of it's
origins, it was called "The San Francisco Treat!" Originally named for it's
combination of half rice and half pasta, Rice-A-Roni quickly became a staple in
American families meals. Families across America were introduced to Rice-A-Roni
though television ads featuring Sanfrancisco's cable cars and the famous "The
San Francisco Treat" jingle.

Quinoa White Chicken Chili
Ingredients
- 1 tablespoon oil
- 1 onion, diced
- 2 jalapeno peppers, diced
- 3 cloves garlic, chopped
- 1 teaspoon cumin, toasted and ground
- 3 cups chicken broth or chicken stock
- 1 cup salsa verde
- 1 pound boneless and skinless chicken breasts or thighs
- 1 (15 ounce) can white beans (or 1 1/2 cups cooked beans, from 1/2 cup dry)
- 1/2 cup quinoa, rinsed
- 1/2 teaspoon oregano
- 1 tablespoon lime juice (~1/2 lime)
- 2 tablespoon cilantro, chopped
- salt and pepper to taste
- and a cut up avocado
- Heat the oil in a large sauce pan over medium heat, add the onion and jalapeno peppers and cook until tender, about 5-7 minutes.
- Add the garlic and cumin and cook until fragrant, about a minute.
- Add the broth, salsa verde, chicken, beans, quinoa and oregano, bring to a boil, reduce the heat and simmer until the chicken is cooked and the quinoa is tender, about 10-15 minutes.
- Remove the chicken, shred or dice, return to soup along with the lime juice and cilantro, season with salt and pepper and remove from heat. Add in the diced avocado.
Slow Cooker: Optionally implement steps 1 & 2, place everything except the lime juice and cilantro in the slow cooker and cook on low for 6-10 hours or on high for 3-4 hours before continuing on with step 4.
Option: Add 1 cup zucchini along with the chicken.
Option: Add 1 cup corn 5 minutes before taking off the heat.
Option: Replace the jalapeno peppers with poblano peppers or 1 4.5 ounce can of diced green chilies.
Took a quick run into town to mail letters, pick up some cracked corn at Ace and pay my bill
got some NexGard (chewable flea/tick meds for Dude) at the vet's
Had some fun conversations with Ace staff (Dorri and Bobby) and with Valerie at
the vet's. They are all decorated at the vet's for Halloween already!
OMGOSH. Then Valerie and I discussed that my daughter, a Halloween baby and
my son a Valentine! Come to find out, Valerie is a Valentine baby too!
Last night dinner was Schwans Chicken Lo Mein, containing roasted chicken
tenderloins, fire-roasted onions, green and red peppers, and tender noodles with
a savory sauce of soy and sesame.... and a couple of their pork egg
rolls...
OMGOOOOD!!!!
