Throw Back Thursday ~ Sami ~ Presidential Election ~ Chicken Taco Soup ~ Banana Cream Pie



Good 30º foggy frozen again morning. Amazing yesterday we warmed all the way up to 60º!!

Today is very special in our family, it's Samantha, aka Sami's, birthday. She is 9 years old!

Yesterday was just a day to catch up, bills, paperwork ready to mail for taxes, clean out a cupboard! That means, toss "stuff" out! Always a good thing to do. Got too much "stuff" !!!

The president-elect won the election with less than 40% of the 
 popular vote but had the majority of electoral votes. The Republican 
Party had put forth a candidate to win several crucial states that 
could swing the Electoral College.  The election was a bitter one 
with the Democrat Party fractured between two candidates.
The incoming president received so many death threats that he 
chose to arrive in Washington in secrecy.  The security for the 
inauguration was the tightest ever with troops stationed on 
buildings throughout the day.  This was an unprecedented 
amount of protection for any president-elect.  Many 
members of Congress chose not to attend the ceremony.
Despite all this ....... Abraham Lincoln was sworn in as our 
16th president on March 4, 1861.

Later my dinner was reruns from McGrath's awesome scallops. Then I watched the Chicago "trilogy"... Chicago Fire-Chicago Med-Chicago Justice. All related about a fire in an "empty" building inhabited by young people...like the one in Oakland.



Here is a quick and easy Crock Pot meal..
Chicken Taco Soup:

1 onion chopped
16 oz can chili beans, undrained
15 oz can black beans, undrained
15 oz can corn, undrained
2 10 oz cans diced tomatoes w/ green chiles, undrained
8 oz can tomato sauce
12 oz can beer, or non-alcoholic beer
1 pkg taco seasoning mix
5 boneless skinless chicken thighs (or if you prefer, use boneless skinless chicken breasts. Personally, I like the thighs better.)
shredded Cheddar cheese for garnnish
crushed tortilla chips for garnish
sour cream for garnish
1. Put onions, beans, corn, tomatoes, tomato sauce, and beer in CrockPot and mix well.
2. Add taco seasoning and mix well.
3. Place chicken thighs on top and push then gently into the soup mixture so they are partially covered.
4. Cover and cook on low for 5 hours
5. Take chicken thighs out of pot and shred and put back in pot.
6. Cover and cook on low for another 2 hours.
7. Serve topped with the shredded chees, chips, and sour cream (if desired)
