in 1983, friends Jim (he was like a son, and I was his 'other mom'.) and Dawn
Forbus were married. Wow, 32 years guys! CONGRATULATIONS!
So good to
visit with them a the LASD Roundup in Laughlin! Jerry's nickname for Jim was
'The Busses'!
Jim was an
LASD Deputy and then moved to Washoe County, NV, and was a Deputy there until he
retired. Now he's enjoying his granddaughter, Audrey, and being
Papa!

Thought I'd share this super easy, super good recipe from PattyK...
Patty's Easy
Cookies
1 box cake
mix, any flavor
1/2 cup
oil
1/2 to 1
cup of any flavor chips, chocolate or whatever.
1 cup
nuts
2 beaten
eggs.
Mix, drop
and bake
350 degree
oven 14 minutes Or try them in the waffle iron!!!
Yesterday I was going to PJ and Dave's to check the fish (I think the cold
weather has them on the bottom of the pond!) and water some indoor plants. My
golf cart refused to run. CRAP! So, now it sits in the driveway as I can't push
it back to the patio. Sigh....
For dinner I cooked a couple yams in the casserole Crock-Pot. Cut in half,
put in a little water, set on low or medium for about 3 hours (depending on
size) and cook til soft. Had them with some leftover couscous ....
All I know. Nuff said. Happy TBT. Ciao.

April 16th
National Eggs Benedict Day (YUMMMMM!)
Credit for this recipe is given to Chef Charles Ranhofer of
Delmonico’s Restaurant in New York City—which also happened to be the first
restaurant opened in the U.S., starting with a small pastry café in 1827 and
expanding into a restaurant two years later.
At that time there were no public dining rooms or
restaurants. Men could stop into a tavern for a beverage and what amounted to
“bar food.” People ate all their meals at home or, if traveling, at the inn or
hotel. Otherwise, hungry people got food from street vendors.
In the 1860s, a regular patron of Delmonico’s, Mrs. LeGrand
Benedict, arrived for lunch and found nothing appealing on the menu. She
discussed her tastes with the chef, who created on the spot what would become an
iconic recipe. In his cookbook, The Epicurean, published in 1894, he called the
recipe called Eggs à la Benedick, inadvertently misspelling her
name.

The recipe is relatively
easy: toasted English muffins topped with a round of cooked ham “an eighth of an
inch thick and of the same diameter as the muffins one each half.” A
poached egg is placed
atop each each muffin half, and the whole is covered with Hollandaise sauce.
