Good 44º drizzling morning.
Yesterday morning I met up with Brian Jen Tucker Sami at Tap
Rock for their Sunday Buffet. Gloomy all day...
Tap Rock sits right on the Rogue River and the decor is such
fun.... fishes and bears!
This door is so interesting with the fishing
bears...
Sami and Tucker had waffles with whipped cream, chocolate,
marshmallows (you can add any of the "condiments" ... some real healthy stuff!)
I had sausage, bacon, a biscuit (soooooooo good) with gravy, eggs benny,
pineapple and strawberries, scrambled eggs, and cheese blintzes. OMG. OINK OINK
OINK. Oh, and also a mimosa! Good thing I don't eat there for the Sunday buffet
often!
Sami and Tucker were busy drawing pictures for the two waitresses (Jessica
and Jenny, I think... twins. Darling girls) Tucker drew a snowman and this is
Sami's signature pigeon. She just draws it quick as a wink! So cute.
On the way out...
See, you can see the fish "swimming" in the concrete!
Yesterday's football.....
The Broncos Colts game was a surprise. Didn't think Peyton would give it
away like that!

(Gag,

)
I had to take the trash to the trash can and put the can up on the road.
Dude wanted a run, so off we went (he ran hard a little over a half mile... and
pee'd on every single tree down and back!) I drove the golf cart. Just as we
were leaving the house it started sprinkling. Good thing I didn't wait another
hour, as it started coming down good! As of this morning we've gotten just over
1/4".
For dinner I decided to make that Crustless Quiche I posted
yesterday ( http://oregonsue.blogspot.com/2015/01/weather-comin-animal-thieves-football.html )
Instead of just using broccoli I had a bag of Safeway Broccoli Stir-Fry (a
big favorite of mine)
It has broccoli, carrots, and snow peas. I cut up some of the broccoli and
the whole bag of veggies went into boiling water along with some dehydrated
chopped onion and 6 fresh sliced mushrooms for just a couple minutes to soften.
Drain and cool. Whisk 5 eggs with salt, pepper, garlic powder and 1 cup milk.
Add in veggies and 2 cups shredded Swiss cheese.
Put in deep dish pie pan that has been coated with cooking spray.
Oh yeah, and I chopped up about 4 stalks of celery and added in because I like that crunch!

Bake an additional 30 minutes. Let sit for 10 minutes before cutting and
serving.
I had two pieces!!! This is sooooooooooooooooooo good!!! Easy. I am going
to experiment with other ingredients and make more!
All I know. Nuff said. Happy Monday. Ciao.

Yes, Edda and GloW and John enjoyed Tap Rock. Glad they got to go there. As for the quiche.... for John I'd use cauliflower and maybe roasted carrots, red or yellow bell peppers, yellow and/or orange squash, egg plant, corn, mushrooms.... or just make it for yourself!!! xoox
