Good 42º (gettin' colder) morning. Humidity at 87%. No rain
predicted until later tonight or tomorrow.
My dear friend, Pat Goslin, (wife of late former Avalon, Catalina Island
Fire Chief, Goose Goslin) has gone through a lot recently. She goes for dialysis
3 times a week and last month she broke her femur ... twice! Here she is on her
way to dialysis on Friday.....
What a gal!!! Super Gal!!! Love you Pat!!!

Here is a good/EASY Shepherd's Pie recipe..
1 pound ground beef
2 cups loose-pack frozen mixed vegetables
1 can (10¾ oz) condensed tomato bisque soup or tomato soup
½ cup low sodium beef broth
1 T. Worcestershire sauce
1 t. diced minced onion
½ t. crushed dried thyme
generous pinch ground black pepper
1 package (24oz) refrigerated mashed potatoes
½ cup shredded cheddar cheese
Directions:
Preheat oven to 375º. Lightly grease a 2 qt rectangle baking dish and set
aside. In a large skillet cook ground beef until browned, breaking it up with a
wooden spoon while cooking. Drain off fat. Stir in mixed vegetables, tomato
bisque, broth, Worcestershire sauce, diced minced onion, thyme, and pepper.
Bring to boil over medium heat, stirring. Transfer to baking dish. Place
potatoes in large bowl, stir until smooth. Spoon potatoes into mounds on top of
the meat mixture. Bake uncovered, in preheated oven, 20-25 minutes, or until
heated through and bubbly. Sprinkle with cheese. Let stand 10 minutes before
serving.
Dinner last night, while watching and cheering on my
Patriots!, was the turkey loaf, a slice sauteéd and set atop some sauteéd
celery, tomato, and spinach...
I put some spicy Tabasco mayo in the avocado half topped with bacon
salt!

Sandwich Day
The
annals of English history report that John Montagu was the 4th Earl of Sandwich.
Among other things, the 4th Earl of Sandwich was a heavy gambler. Montagu often
spent many long hours in London's gambling parlors. In 1762, he created the
sandwich, by putting meat between two pieces of bread. This allowed him to
remain at the gambling table for long periods of time. Obviously, the sandwich
was named after him
